Feta Cheese and Bacon Stuffed Breasts
Great recipe and VERY simple. I took advice of others and let chicken sit in the oil/lemon juice/ garlic/oregano mixture in a ziploc for a little over an hour in the fridge. I then removed it and stuffed it with crumbled Feta mixed together with pieces of crumbled bacon. Any leftover feta/bacon I placed over the top of each breast during the last 7 minutes of baking. Great recipe, will make again and again.

Anne's Homemade Chorizo
This is a great Chorizo recipe. This was our first attempt at making chorizo to add to several dishes that call for it. I added 2 tsp of cumin for a nice flavor and also used a mixture of chili powders. Half of chili powder I used was the generic grocery store variety and the other half was pasilla chili powder. Next time I will add a third variety to fine tune the heat and chili pepper taste to our personal liking. I took the advice of one reviewer and reversed the volume of beef and pork so that there was twice as much ground pork as there was beef. My wife loved it and we will make this again.

Cajun Style Baked Sweet Potato
Made the recipe "as is" and had these along with a turkey breast and biscuits. I have to agree with many other reviewers that these are a great alternative to the standard baked sweet potato with some butter and cinnamon on it. We did cube the potato as many others suggested. These potatoes were great. Soft in teh center, just a hint of crunchy on the edges and great flavoring. We will add this to our standard array of side dishes.
