Almost Stuffed Peppers
One of the easiest, best-tasting quick recipes on this site. I don't trust canned tomatoes (acid interaction) but I do substitute an equal amount of pasta sauce (from a glass jar) thinned with water for the tomatoes and water called for. I like the extra zest that garlic adds to this dish. Also using lean ground turkey for ground beef makes the dish even healthier as well as quick/instant brown rice for more fiber. This is a family favorite!

Salisbury Steak
Excellent, quick recipe. I used tomato sauce instead of ketchup since someone said the gravy was too sweet. I had to use oil spray because my beef was lean. Also used onion, garlic & celery in patties rather than have it bland as someone else had stated. I didn't have onion soup so I used real onions in the gravy also. Wonderful meal!

Asparagus with Sliced Almonds and Parmesan Cheese
Very easy instructions, very different result from my usual grilled asparagus with olive oil and garlic. Per others' suggestion, I did boil mine first as well, but drained the water and immediately added butter and 1 T Olive oil to saute on the stovetop. We didn't have almonds on hand so I substituted minced pecans with excellent results. I used Kroger grated Parmesan but merely dusted the spears and let it stay in a warm oven to melt the cheese w/o making a stringy mess. I'll start alternating this dish with my usual garlic broiled spears.
