Mother's Ham Casserole

Magic Peanut Butter Middles

Ok, so I have made these about 5 times now. The first few times, I found the chocolate dough to be a little dry and not very flavorful. Here is a summary of what I figured out to make the chocolate part moist, fudge, and just awesome: 1) Use brand name cocoa like hershey's, it will taste better; 2) Add 2 Tbsp sour cream to liquid mixture; 3) Add 1 extra egg (total of 2); 4) add 1/2 cup mini chocolate chips to chocolate dough. YUM!

Soft Chocolate Cookies

Fabulous. I tried several simliar recipes for chocolate cookies on this site and this one is by far the best. Love the flavor and texture. I prefer to roll the entire ball of dough in confectioner's sugar before baking though, rather than dusting on afterwards. Also, we tried them with finely chopped mint chips in the dough and they were so good!

Brownie cookies

I wasn't thrilled with these. They are fine if you HAVE to have something sweet, but I have been experimenting to find the perfect soft chocolate cookies, and these are not it. They bake really flat, and just have too much of a sweet cocoa-y flavor. I did find what I was looking for however in the recipe called "Soft Chocolate Cookies" on this site. Those were 5 stars and had great texture flavor! That is the recipe I will be saving to my recipe box!

Simple Whole Wheat Bread

This was my very first bread-making experience! I had made some cherry preserves one weekend and thought that it would taste better with homemade bread. I had never made bread before - not by hand or in a machine - and I was feeling daring, so I made the bread following this recipe. I was so shocked when I saw how beautiful and tasty it turned out! My wife says its even better than her mother's recipe. As you can guess, I am now making this recipe every Sunday and we've almost stopped buying store-bought bread altogether.

Campbell's Kitchen Creamy Chicken Enchiladas

I have tried many enchilada recipes, and this is my LEAST favorite. The mixture of soup, sour cream, and salsa is overpowering and left me feeling quite sick after eating this. Not to mention that the dish just doesn't LOOK appetizing on the plate. It's all one big orange messy heap. If you decide to try this, one tip. Go ahead and put the salsa mixture inside the tortillas, but leave it OFF the top. The only thing I think could have improved this recipe is to stick with plain cheese, tomatoes, and onions on the top, maybe some lettuce and beans. But not the filling inside AND on top-- it was too much.

Banny's Southern Cream Cookies

I like how this cookie stayed so soft, puffy, and moist. The dough is super versatile. I left out the walnuts and made small rounded teaspoon sized cookies with cinnamon on top as snickerdoodles, and then also baked a batch of larger rounded-Tablespoon sized cookies, which made amazing big,thick, fluffy, soft sugar cookies just perfect for icing. The kids loved these.

Cajun Macaroni

Sorry, I did NOT like this recipe. I thought it might have potential but the flavors together ended up tasting truly nasty. My husband and I both took one bite and made the same face. Cajun seasoning was also overpowering and I didn't even put in the whole amount called for. If you must have mac n' cheese, stick to the plain old stuff, but don't waste the extra ingredients on this dish.

Divine Meatloaf

I am very picky when it comes to meatloaf and I really loved this recipe. I added only half the onion soup mix and also used crumbled wheat bread in place of saltines and it turned out wonderfully. Oh, I also ended up skimming about a third of the sauce off the top half-way through cooking because it was just too much. I'd definitely cut back the sauce next time. My husband loved this recipe.

Down-Home Dinner

Pretty good...nothing amazing, just your basic meat, potatoes, and veggie casserole... nice, warm comfort food for a fall day. Kids and hubby are sure to eat it up. I added an extra can of corn.

Apple Pound Cake

I took this to our family Halloween get-together and everyone raved about it! I left out the raisins, added a touch extra nutmeg, and used chopped hazlenuts because we didn't have any almonds. Still turned out beautiful. Oh, I also baked it in a loaf pan. Beautiful and delicious fall dish, I am baking more this week to give as gifts.
