Peachy Bread Pudding with Caramel Sauce
I made this last night and it was wonderful....my husband who is not a bread eater even enjoyed it! I added a tsp. nutmeg, allspice, and apple pie spice to the peaches. I also substituted 1/4 cup peach juice (I used canned peaches) for 1/4 of the water. i didn't mash the peaches, just them up a little. I didn't have rum for the sauce so I used 1 1/2 cups of powdered sugar, 1/4 of milk and I melted 3 tbl. of marshmellow creme (from a jar). I stirred until well mixed and drizzled over bread pudding. OMG! This is a keeper!

Guacamole
This is a keeper! I began to eat guacamole last year and desired it from time to time....but making myself was even better. Thanks for the recipe! I used finely chopped red and sweet vandalia onions but otherwised followed as directed.

Banana Oat Muffins
I tweet this a little...but it was still delicious! 1) I sifted the rolled oats and added walnuts...2) I used 2 cups of All-Bran cereal and let that soak in the milk...3) I used 3 med. sized bananas and 2 eggs...4) I used 1/2 cup brown sugar and 1/4 cup of white sugar...5) to not have that baking soda taste...sift all the dry ingredients together and add to wet ingredients..6) added tsp. vanilla, cinnamon, allspice and nutmeg (Love the spices!)and last but not least...I sprayed the muffin pans/paper cups and then sprinkled with powdered sugar and cinnamon. I made 24 mid-sized muffins. Next time I'll use granny smith apple chunks and cinnamon applesauce instead of bananas and oil. Delicious!
