Great! Used left over grilled chicken breast - very easy light dinner.

Layered Chicken and Black Bean Enchilada Casserole
I prepared this the night before and cooked the next day for an office luncheon. Excellent with rave reviews from my co-workers! The only change I made was to use green enchilada sauce instead of the red.

My Chicken Milano
Thought this was good and easy! Used canned green beans instead of frozen, and added some white wine as another reviewer suggested. Also cut the chicken breasts into smaller pieces and served over white rice. The red pepper flakes added a nice kick-this would probably be bland without them. Great gluten-free recipe!
