Salmon Fillets with Creamy Dill

My boyfriend is NOT a fish eater, but this got him to eat salmon! The first time I substituted the full fat mayo (yuck!) with lite miracle whip because people had said a sweeter type of sause. I also tried fat free mayo, which was also excellent - either works, depending on your taste preferences. The cool dill flavor goes so well with the creamy sause and the hot salmon. Excellent recipe!

Chicken Vegetable Potpie

This was SO good and SO easy. We are healthy eaters, so with a healthy request soup substitution and skipping the potatoes, this was comfort food - guilt free!

Strawberry Brownie Delight

This recipe turned out really well. I made it for Mother's Day and it was a hit! I didn't use the preserves for fear that it would be too rich - instead I used fresh strawberries and whipped topping in the middle to hold it together. A warning for those considering making it - its really hard to remove the brownie from the pan and move it to make a layered cake. Still, the combination of the dense brownie, the light whipped toping, and the fresh fruit was delicious. To make it more healthy I used apple sauce instead of oil in the brownies and light whipped topping. You can also buy sugar free brownie mix that tastes almost as good as regular with fewer calories. Highly recommended for chocolate and strawberry lovers.

Cranberry Cherry Pie

This recipe turned out great! I made no changes, just followed the recipe to the letter. It was such a hit at Thanksgiving at my boyfrinend's house that I took it to mine for Christmas too! A great alternative to your normal holiday pies.

Sun-Dried Tomato and Bow Tie Pasta

This recipe turned out so well! I pretty much followed the recipe, except I added artichoke hearts and used whole wheat rotini instead of bow tie. I also mixed in some extra italian cheeses and some whole pine nuts at the end. Next time I will make it as an entree with some grilled chicken on top!

Valentine Meatballs

Made these for Valentine's day for my boyfriend - they certainly were CUTE, but a little dry. If I had made them a tad bigger they would have been better, so more stuffing could fit. Next time I will poor some beef broth over them and cook a little less time so they are more moist. On the whole, though, this was a great recipe for the special occasion.
