Awesome Egg Rolls

I haven't been able to have egg rolls for 6 years due to a gluten (wheat) intolerance. I made these last night as a treat to myself. I used rice papers instead of egg roll wrappers and I baked them instead of frying them. They tasted almost exactly like the real thing. YAY!!! Thanks so much for the awesome recipe.

Flourless Peanut Butter Cookies

This recipe is a standard at our house. My kids have dairy/nut/wheat/corn allergies so we use sunflower seed butter instead of peanut butter. They taste amazing!!! I can't even tell they're not peanut butter!

Vegan Pancakes

This recipe was sooo good. We adapted it to make them gluten free (3/4 cup white rice, 2 cup potato starch, 1 tsp xantham gum) and I subbed brown sugar for the white sugar, added cinnamon (for color), and a bit of vanilla. We loved them! Will definitely make again! Thanks!!!

Scallop Scampi

This is a fantastic scampi recipe and works well with baby shrimp as well as bay scallops. I would definitely reduce the amount of salt significantly though. The first time I halved the salt and it was wonderful. The second time I forgot to halve the salt and it was so salty I almost couldn't eat it.

Sally's Spinach Mashed Potatoes

These were amazing! I used instant potatoes and it was still wonderful and it shaved a ton of time off of the recipe. I will definitely be making this again. Be sure if you use instant potatoes that you follow the box directions and then don't add the salt, milk, or butter that the recipe calls for.

Ultimate Grilled Steak

I did not care for this steak AT ALL. I'm a steak lover and I couldn't even finish mine. The A1 was completely overpowering and made the steak taste cheap and family diner-ish. I will not be making this again.

Salsa Chicken

WOW!!! I dredged the chicken pieces through the taco seasoning and then, after baking, topped with dollops of sour cream. It was very good. I served it over rice (minute rice, the rest of the bag of taco seasoning, can of diced tomato, green pepper, and onion) and mixed in some sweet corn. It was excellent and my husband asked me to make it again the next night for dinner!

Apple Butter Pie

This is probably the best pie I've ever had! It combines apple flavor, cinnamon, and a custard-like texture... All of my favorite things in one pie. Its awesome served with whipped cream on top.

Skillet Corn Bread

This recipe is awesome! There's no better way to put it. I added some sugar because my family likes sweet corn bread. It turned out moist and delicious. I wouldn't change a thing on this recipe other than adding sugar, and I'm a tinker-er. :)

Delicious Ham and Potato Soup

This is the best soup ever. I added some carrots for extra color as other reviewers suggested. It turned out so awesome. I've never had a soup get so nice and thick before. My husband was begging me for the last container of leftovers for lunch the next day.

Stuffed Shells III

CUT THE SALT IN HALF!!! The recipe is amazing, but it's way too salty. Silly me, I forgot to read the reviews before making mine and it was way too salty. It is however an excellent recipe. I used Classico italian sausage spaghetti sauce and added mushrooms. It was amazing. I'd also definitely double the sauce. I halved my recipe and I almost needed more than one jar. I can't imagine one jar being enough for the whole recipe. Flavor is EXCELLENT!!!

Pumpkin Whoopie Pies

These are really good. The filling is the best part! I've never had a whoopie pie that I enjoyed quite like these. My whole family loves these. I chose this recipe over all of the other recipes because the filling didn't use egg. I wasn't keen on eating raw eggs. I'm glad I chose this one. My only suggestion for this recipe is to grease your hands when you shape the mix. It gives them a nice, smooth top which is nicer for appearance. I wouldn't change a thing about the flavor though. A+
