Middle Eastern Rice with Black Beans and Chickpeas
I made the vegetarian version of this and thought that it was wonderful. It was a great quick and healthy meal. The coolness of the cold cucubmer & tomato salad that I served with it was a nice compliment to the rice and beans.

Coconut Orange Cupcakes
I made this recipe for an event at work. The cupcakes came out wonderfully. They were a perfect light dessert aside the rich brownies, etc. I used organic coconut (it's much more moist and I think it has a better flavor). I also did not add the coconut topping until right after I pulled them out of the oven. Will most def. make these again!

Fish Fillets Italiano
I'm not sure if I didn't go something correctly, but I wasn't crazy about this flavor. It was a little bitter and maybe just too acidic from the tomatoes for my tastes. I probably won't make again.
