Creamy Pesto Pasta Salad with Chicken, Asparagus and Cherry Tomatoes
Wonderful pasta salad! I made a batch and a half of dressing. I mixed the full recipe of dressing into the salad and let it chill for several hours. From other reviews I knew it would be dry so I saved the extra dressing to stir into the salad right before serving. It's even better on days two and three.

Real Sopapillas
This recipe was simple and delicious! Making sure that the oil was the right temperature and turning the sopapillas continuously beginning immediately after dropping them into the oil ensured that they puffed up perfectly.

Creamy Vanilla Ice Cream
I made this icecream for my daughter's birthday party and it was a huge hit! It is well worth the time and effort. I'm going to serve this with a rich chocolate cake for Christmas Dinner.
