Cucumber Sandwiches III

Beer Dip I
My family has been making this for as long as I can remember. We take it to every superbowl, cookout and potluck type dinner. I make it for game night at my house and it is always gone. This is fast, easy and everyone always wants the recipe.

Mexican Rice III
This is amazing. I made it with Bob's Mexican Chicken from this site last night for some friends and family. Everyone loved it. My boyfriend liked it so much he brought it to work today to let his friends try it. The only changes I made was I added about a 1/2 cup of extra chicken broth. 1 small can of tomato sauce. I used a can of Rotel instead of the tomato (only because I like it better) and I also added chili powder, onion powder, garlic powder and paprika to it. I also added another jalpeno because we like spicy food. Once it was boiling and I turned the heat down and covered it, I did not remove the cover for the full 20 minutes. I made it slightly ahead of time due to the amount of prep work involved to make the chicken so before serving I put it in a baking dish topped it with cheese and warmed it through. It was great and tasted good reheated the next day. Thank for sharing we wont have another Mexican dinner without it.
