Scalloped Potatoes and Onions
These were good, and very easy, however for our taste they seemed to lack something in flavor and richness. I attribute this to the use of mayo as the only "creamy" ingredient. I think I will continue looking for other recipes. Note, if you make these, do not be concerned when pulling them out of the oven to find them very "liquidy". The liquid is all absorbed within 5-10 minutes of removal from oven.

Rosemary Mashed Potatoes and Yams with Garlic and Parmesan
Wow! This was very good and super easy to make. I made no changes in the recipe and was very pleased with it. I served as a side dish with simple pan-fried pork chops and everyone commented that the meal just felt like a special holiday feast just because of the potatoes!

White Cheese Chicken Lasagna
This was really good. Lasagna can be time consuming, so to help cut that down I boiled chicken breast the day before so ready to shred during assembly. I did as someone suggested combine chicken, spinach and ricotta. I used the no-cook noodles. This ia a beautiful completed dish, cuts well if you let it sit. I was worried as sauce was very thin, but it sets up nicely.
