'Day Before Payday' Kielbasa and Corn Hash

I used 1 fresh pepper and 2 small onions instead of frozen. I didnt have red pepper flakes but used some Chilli powder and cayenne and it worked great. The egg was a nice touch. I served it with some sauteed spinach. Very good!

Lori's Famous Crab Cakes

I think I will be ending my 4 year search for a keeper crab cake recipe. These were the best homemade I've ever had. I made a few small changes - I sauteed the peppers and onion for a minute or 2 in a little bit of butter, I used a whole egg instead of just the white and I broiled them instead of frying. I drizzled about a tablespoon of melted butter over the tops the last 2 minutes of broiling for flavor. Yum.

Really good recipe! I followed it almost exactly but added a bunch of old bay to the crab mix. Oh, and I didnt have white pepper so I just used regular black.

Award Winning Soft Chocolate Chip Cookies

I loved that these stayed chewy! I followed another users recommendation to use 2T of vanilla, add 2t of baking powder, and some salt. These made A LOT, so you could definitely get away with halving it.

Spicy Red Snapper

This is a new staple! I used Flounder (couldnt find Red Snapper), sherry instead of white wine, 2 large shallots instead of onion, and added about a tablespoon of tomato paste. I also used about half of the red pepper as I am not big on heat. Really great flavors!

Vegetarian Korma

Used half a cup of coconut milk, half a cup of cream. Potatoes take way longer than 10 mins so allow time for that. All in all good recipe. Served over jasmine rice.

Capers and Halibut

This was pretty good for a quick sauce. It was very salty even for me and I love salt. I would definitely not add as the capers provide more than enough. I was unable to find Halibut so I substituted Cod. Next time I would like to try this using Halibut and I would cut down a little on the butter.

Shrimp Etouffee II

This was very good. I am scared of cooking in the microwave so cooked on the stove. Made sauce, sauteed shrimp and then combined the 2. I followed other reviews and added some Cajun seasoning to the sace and the shrimp before I cooked them, added some white wine and worcestershire sauce so the sauce at the end with the soup and tomato paste. Served it over jasmine rice.

Sukhothai Pad Thai

I used some of the suggestions on the site for my first attempt ever at making Pad Thai. I used rice vinegar instead of white, peanut oil for vegetable, chilli powder for paprika, pickled radish for dried radish, fish sauce for soy but used a little soy when cooking the tofu. I didn't grind the peanuts, just chopped them. I was unable to find tamarind pulp or concentrate but I did find a powdered tamarind soup mix that I added water to and used 2 T of that. I also chopped up some Cilantro to toss in at the end. It turned out EXCELLENT, almost as good as my favorite thai place.

Chili Potato Burritos

I followed others' suggestions for this. I used the Red Enchilada Sauce recipe on the site, and added some minced onion and more spice into the potato mixture. I also found the potato's were very dry when I mashed them up (could have been the type of potato I used) so I added some chicken broth before mixing with cheese and spices. They were great!
