Mexican Rice II

This was just ok for us. It's a simple recipe with common ingredients I always have on hand. I think it might be better with some dice green chiles added to it. I'll probably try it again sometime, but with some modifications.

Chicken Enchiladas II

My husband, 2-yr old, and I really enjoyed these. I couldn't get my 6-yr old to take a bite, but that's not the recipes fault. I did sub cream of chicken soup because that was what I had on hand and I added some cumin and chili powder. Other than that I followed the recipe and it was great. I served it with Mexican rice II from this site.

Bow Ties with Sausage, Tomatoes and Cream

So easy and so terrific!! I did leave out the red pepper flakes for my 6-yr old, but I'm sure my husband would have liked it even more if I had included it. The only thing I did differently was to run some of the tomatoes through my food processor because we don't like really chunky tomato sauce. The ingredients are simple, it's quick to prepare, and we will be eating this often!

Caramel Apple Dip

A great dip loved by all. I made this for my daughter's Halloween party and kids and teachers were all raving about it. It's great with a touch of cinnamon added too.

Holly Christmas Cookies

Thank you for reminding me of one of my favorite holiday treats. I was so excited to be able to share this recipe with my 6-year old daughter this Christmas. I added a splash of almond extract and the vanilla extract called for in the recipe. I lined my baking sheets with wax paper and sprayed them with cooking spray and had no issues with them sticking. I used the 16oz bag of large marshmallows that the recipe called for and found that I did have to add about an extra cup of cornflakes to reach the correct texture. I handled the hot mixture and my daughter went behind me and added red M&M's instead of red hots - she doesn't like the red hots. We both loved them and look forward to making them again next year.

Herbed Beef Tenderloin

I made this for Christmas dinner and found that for my 4-pound tenderloin it took about 70 minutes to cook. It was cooked to perfection and very tender, but I would have liked for it to have had a little more flavor. No one else in my family complained, so made it was just me.

Brunch Potato Casserole

I served this along with scrambled eggs and biscuits for Christmas morning. I prepared it the night before, but I did change it slightly. I used 1c mayo and 8oz of cream cheese. I also used shredded cheddar cheese. The taste was wonderful and well received by all. I'll be making this again.

Saltine Toffee Cookies

I made this for part of my Christmas cookie tray and it was a huge hit. The only substitution I made was to used some crushed sliced almonds instead of the pecans. My sister-in-law and I liked we so much that we had to make a second batch before she left to take home with her. I was so simple and the taste is terrific!! I will be making this frequently.

Rosemary Ranch Chicken Kabobs

I made these as part of my Christmas Eve buffet. I followed the recipe exactly except that I marinated mine all day. They had great flavor and husband has asked for them again. Even his very picky mother liked them which is saying a lot.

Chicken Tortilla Soup V

I follwed this recipe to the T and it was good, but after tasting it I decided that for our family it needed a little more heat. I added the rest of the jar of salsa and additional cumin and chili powder. I also decided to throw in a can of pinto beans at the last minute. My husband and I really enjoyed it and will definitely be making it again.

Turkey Pot Pie I

I've never made a pot pie before, but this was a great way to use up left over turkey. I used about 1-1/2c gravy in place of some of the water and bullion and added some poultry seasoning and left over corn. It was very flavorful and a great dinner for a rainy night. I will definitely make it again.

Baby Blue Punch

I made this for a co-worker's grandma-to-be shower. I used blue Hawaiian punch, white grape juice, and Sprite. It was a big hit and the vanilla ice cream gave it a nice creaminess. It also made for a great presentation with little froggies floating in the bowl.

Easy Morning Glory Muffins

These are great muffins! I made them with a couple substitutions. I used half ap flour and half whole wheat. I also used 1/2c applesauce, 1/4c butter, and 1/4 oil to replace the 1c oil. I was able to make 12 muffins and 2 mini loaves out of the one batch. My kids (2 & 5) and I liked them so much we made a second batch the next day which yielded 24 muffins. Thank you for a healthy and terrific treat. Try them with the Cinnamom Honey Butter from this sight. So YUMMY!!

Easy Mac and Cheese Muffins

5 for creativity, but only a 2 for flavor. This is a terrific idea. The individual portions are great for school lunches. Unfortunaely, the flavor was bland. I think I'll adapt my regualr recipe to this method. Thank you for the inspiration.

Downeast Maine Pumpkin Bread

This bread certainly doesn't need another review, but it is terrific. I used 1/4c oil, 1/4c of butter, and 1/2c applesauce in place of the 1c oil. Served with Cinnamon Honey Butter also from this sight. Even my picky 5-yr old loved it.

Cinnamon Honey Butter

Based on the reviews that it was too sweet, I only added 1/4c of powdered sugar and that was plenty for me. I also added another 1/4c of butter because I used up all the honey I had left and it was slightly more than I need. It was delicious on the Downeast Maine Pumpkin Bread and the Easy Morning Glory Muffins from this sight. This morning we had it with our french toast and it was great too. Thank you so much!

Blueberry French Toast

This rating is for the syrup only. It was delicious. I followed the recipe exactly and the sweetness was just right. It was so simple to make and I can't wait to experiment with strawberries and raspberries. My only problem was that I must have had the heat a too high because it thickened very quickly and I had to add some additional water to thin it out.

Thanks for a great recipe! I added some TS Garlic! Garlic! and some of my favorite cajun seasoning. It was a great dinner and one we will definitely be making again.
