Downeast Maine Pumpkin Bread
Absolutely delicious! I made 12 muffins and a large loaf and the muffins were half gone before the loaf was even out of the oven. I used leftover butternut squash in place of the pumpkin (a very acceptable substitute I read). I will definitely be making again and again.

Scalloped Potatoes and Onions
These were very good! I was surprised at how creamy they turned out without any milk, cream or cream soup. I made as directed except I was a little short on time so cooked about 1 hour at 375 then 15 minutes at 325. Next time I will add a little something...maybe some thyme.

Jam Filled Butter Cookies
The dough for these cookies was so easy to work with and they were delicious! I made 3 batches to give away as gifts and ended up making another batch just for us (at the request of my husband). I made the holes with the handle of a thick wooden spoon and used a sandwich bag to pipe the jam in. The only change I made was to add 1 tsp of vanilla to the dough. I will be making these every Christmas from now on! Everyone loved them.
