i give this 5 stars because EVERYONE in my family - ages 1 to 35 loved it. i don't know if i've ever made a dish that they all ate. easy, yummy, will make again for sure. like other reviewers, i used salsa in place of chili sauce. it was great!

Spinach Enchiladas

ugh! these were such a let down. really bland, even after i added additional seasonings as suggested by other reviews. and the red sauce just does not compliment the enchiladas at all.

Rice with Summer Squash

not good. by the time i was adding the squash, almost all the broth had evaporated and I had to add some water. edible, but not worth making again.

Jordan Marsh Style Blueberry Muffins

I picked this recipe b/cit seemed a little lower in fat than the other blueberry muffin recipes I had looked at. I LOVED them!! The consistency was perfect - crunchy on top and moist in the middle, and they are not too sweet. Perfect!

Artichoke Chicken

my family LOVED this. i was only making a couple of chicken breasts, so i spooned the remaining artichoke mixture into a dish and baked it alone. It was so good served as a dip with pita chips. also, i added a few dashes of tabasco to the mix, to give it a little kick.

Roasted New Potato Salad With Olives

Yum! I can't wait to make this again. I didn't have enough kalamata olives, so I added some capers. Also, as suggested, I only added 2 T olive oil to the dressing rather than 3 T. So delicious, and very gourmet!

Easy Mexican Casserole

LOVED IT! To make this VEGETARIAN friendly, I made the following changes to the meat mixture...two pouches of boca soy crumbles, taco seasoning, one can of ranch style beans (undrained), and one cup of salsa. Also, I topped the casserole with black olives after it cooked instead of baking them in...and fresh cilantro too.

Curried Cream of Any Veggie Soup

I love this soup - the only reason I wouldn't rate it as a five is because 1) I LOVE curry and 2) I LOVE low fat stuff. Basically, I would not expect my husband and kids to enjoy this. But I will make it again for sure. This time I used potatoes, carrots, corn and peas. It was delicious!!

Slow Cooker Chicken Stroganoff

The first time I made this I didn't even add the cream of chicken soup or the cream cheese because my kids loved the chicken plain so much. I used the leftovers to make the most incredible chicken enchiladas. The second time, I followed the recipe and there were NO leftovers. It's a keeper no matter how you make it :)

Perfect-Every-Thyme Marinade

My husband and mother RAVED about this chicken. I marinated the chicken breasts for a few hours then grilled them. A huge hit. Will definately make it again!

The reviews were right - fabulous. I marinated the veggies and chicken seperately over night and also took the advice of previous reviewers and made seperate skewers of chicken/veggies. LOVED it and so did my kids!

Yellow Squash Dressing

It's like Thanksgiving in the summertime. So delicious. As one reviewer suggested, I boiled the squash and I added to onion and boiled that too. I even used fat free milk and fat free butter spray. The only change I would suggest is an increased cooking time. I prefer my dressing a little drier and this was very moist and mushy (but I still ate three helpings :).

Slow Cooker Chicken and Dumplings

my husband said he wants me to make this every time he is sick....and my kids loved it too! i was nervous it would turn out too oniony, but it was just right. i halved the recipe and it turned out fine. will definately make again.

soggy! i'm a vegetarian so my husband is the judge on all things meat. he requested i never make this dish again. i should have definately taken the advise of previous reviewers and taken the chicken out before making the sauce.
