Coconut Pancake Syrup
Oh my gosh, this is delicious as syrup, ice cream topping or just by the spoonful. I had to use 1/2 light syrup and 1/2 dark syrup (all I had), but it was fantastic!

'Calabacitas Guisada' (Stewed Mexican Zucchini)
Yummy. This dish was super easy and delicious. I even forgot to add the garlic, and used mexican style diced tomatoes to add a little heat.

Buttermilk Coleslaw
I scaled this recipe down and it was delicious. The buttermilk adds a great flavor. This would be great on a fish taco or turkey reuben! Yummy!
