Strawberry, Spinach, and Pear Salad

this was tasty! i made a few modifications based on the ingredients i had on hand: substituted grapes for strawberries, pecans for walnuts and tomato-basil feta for regular feta. i also just used a bag of a 7 lettuce blend and used 1/2 raspberry vinagrette and 1/2 balsamic to fight off some of the tartness of the feta. great way to use some of the pears i had. delish!

Rice with Black Beans

Very tasty, especially for a quick weeknight meal. I used 2 cans of black beans drained, 2 cans of Italian style stewed tomatoes, and added 1 can of no-salt-added corn so we would have some for leftovers. I also added garlic to the onion and cumin, a dash hot sauce, salt, and cilantro to the bean mixture while it was simmering. Very yummy!

Broiled Sweet and Tangy Tilapia

Yummy! My hubby even called this one a "keeper." I doubled the sauce as others had suggested to serve on top of the fish after cooking. I also used the sauce on a veggie-pasta salad with feta cheese. Definitely a wonderful, quick and easy meal!

Parmesan Chicken

Good stuff! I cut the chicken breasts into strips so I didn't have to pound them. Definitely a keeper! Oh, and I used dried dill instead of basil. Yummy!

Scallop Pesto Pasta

Pretty good! I only had 1/2 lb of scallops, so I added shrimp too and sauteed them in olive oil instead of butter. I also had leftover homemade pesto. Hubby loved it.

Cheesy Spaghetti Bake

Yum! I made with tri-color rotini instead of spaghetti. I also didn't have an onion, so I used the green pepper and added fresh mushrooms. Hubby and I both loved it! Definitely will make again - would be great as a potluck.

Green Bean and Portobello Mushroom Casserole

My family loved this for Thanksgiving and I'm making it for Christmas with hubby's family. I used frozen green beans that I cooked on the stovetop before and mixed the cheese in with the soup. There weren't many leftovers! YUM!

Pumpkin Pancakes

Great! I actually ran out of eggs, so I used 2 cups of milk and 1 1/2 cups of pumpkin in place. Turned out great without the eggs! I topped with apple butter and my hubby couldn't get enough of them!
