Balsamic Roasted Pork Loin

So good and so simple! Didn't have steak spice so I used fresh garlic, Rosemary, thyme, and oregano. Also put in a tbs of brown sugar. Baked it over potatoes, carrots and onions. This one will become a regular in our house for sure!!

Lentil Quiche

This recipe is great. I have been looking to cut down meat in my diet and this dish is great for protein. I opted out of the cheese and added half a sweet potato and about 1/2 cup of sliced butternut squash(thinly sliced) to the onions while they were grilling. These gave it a nice texture and a bit more flavour. Didn't have italian seasoning so i added fresh basil and oregano, next time I'll add much more salt and pepper.

Grilled Cheese Sandwich

Nothing like a classic grilled cheese. My friends and i held a grilled-cheese-off, the winner was a toad-in-the-hole grilled cheese: cut a circle out of one piece of buttered bread, put it in the hot pan and crack an egg into the hole. When the whites are cooked top with the cheese and the other slice of bread and flip. SoooOo good, although there was some controversy amongst the other contestants as to whether the addition of the egg disqualified it as a true grilled-cheese sandwich, personally i think if its grilled and there is cheese involved there is no reason to limit the delicious potental of this culinary delight. I like putting a slice of tomato and some fresh basil in mine, it'll blow your mind!

Sky High Yorkshire Pudding

Never knew making yorkshire pudding from scratch was so easy. Was addicted to the instant packets for years, never going back. Mine came out a little over done so the second batch only went in for 25 minutes and came out perfect!

Chocolate Cavity Maker Cake

My Chili

A great basic chili recipe to build from. Throw in whatever veggies you like in your chili. Also, I like my chili withmore heat so I through in a LOT more chili powder, and a few jalapenos.

Thai Curry Tofu

This is relatively quick and very easy and cheap, a huge plus for a student like me! I dusted the tofu in a mixture of flour and curry powder before frying it which gave it a nice crisp outer texture. I added mushrooms, sweet potatoes and lemongrass which added a bit more substance and a hint of sweetness. I also added a few red chilies because I like spicy curries. I let the whole thing simmer for 20 minutes with the tofu and served it over brown rice. Absolutely delicious!

Mary's Sugar Cookies

These cookies were a big success with my friends. I didn't have almond extract, but as it was Halloween I put in a little Pumpkin Pie spice which made for a nice flavour. Not too sweet, but very good.
