Spinach Salad with Pepper Jelly Dressing
I thought this was really good and really easy to make! I've made this a few times now and still love it. The only thing that I would recommend (and this is purely personal taste) is to add a little less than a teaspoon of water to the dressing mixture before you put it in the microwave to heat up. Without the water, I thought the dressing was a little too sweet and too syrupy. I also used the hot pepper jelly instead of the mild for a little kick. It's great! Exactly like a salad I order from a nice restaurant I go to.....now I don't have to go out to get it! Thanks for the recipe!

Hot and Sour Chinese Eggplant
I thought this was very good and easy to make. I used regular american eggplant and cubed it without peeling. I soaked it in water and sprinkled salt on top like the directions say to do but only soaked maybe 15 mins and then poured the water out of bowl. I doubled everything to make the sauce but used only 1 teaspoon regular sugar and one packet of splenda. I also used 1 tsp apple cider vinegar and 1 tsp rice wine vinegar...I didn't have anything else. I substituted the chili oil and vegetable oil for olive oil and used red pepper flakes and red chili powder to spice it up instead of the chile pepper. I also added a zucchini which was really good. I loved the taste of this sauce! Thanks!

Asian Tuna Patties
I used albacore tuna and did not add the sesame oil but I did add 2 teaspoons of olive oil. I mixed the cornmeal into the patties instead of sprinkling on top and then I broiled them in the oven. They didn't take long to cook at all...maybe a couple of minutes on each side depending on how close you place to the broiler. They came out really pretty and tasted really good but I will say a little dry. I served these with a lowfat wasabi mayaonaisse to compensate for the dryness(recipe found on this site) and it was great! This is a great and inexpensive recipe that takes no time at all to cook. I was pleasantly surprised! Thanks!
