Ash-e-jow (Iranian/Persian Barley Soup)
This was AWESOME! I finished it and went back for more, which is unlike me. We used yogurt instead of sour cream, because that's what we had.

Avocado Tacos
Definitely a good side-dish as-is. But add some black beans, some cheese, and whatever else you might like in a taco and these things are awesome as a main dish! Everyone liked the guacamole, which was the star of the dish.

Moroccan Mashed Potatoes
I brought this to a potluck and everyone loved it except for one small thing: it was a bit too salty. I'm making it again tonight though- and anticipate a rave response!
