Artichoke Stuffed Mushrooms

Delish! I didn't have an Italian Cheese Blend, but still wanted to make them, so I used a bit of mild cheddar & cottage cheese. Yum!! The cottage cheese is plenty of salt, so I just used a good quality granulated garlic. More parm, just cause I like it. Thanks for the recpe Anita!

Walnut Pie Crust

Great way to make a diabetic treat! I used Splenda for the sugar & a mix of pecan/walnut. Topped it with Splenda Sweet Potato Pie. Really good, thanks!

Ruby Drive Sloppy Joes

I loved these! I bought a Medium salsa that was actually rather hot so I should have left the hot sauce out. It was too hot for the kids. I left out the brown sugar because hubby is a diabetic. I only used 1 cup of ketchup. Good stuff!

Cornbread I

I really didn't think this was going to work. I usually add flour to my stone ground cornmeal recipes. I also thought the heat would be too high. My husband is a diabetic so I decided to go for it. I took a peek at it during cooking & it looked like it was a weird boiling mess. But, I'll admit I ate half the pan. Kept coming back for more. Really liked it. I even did the vinegar, skim milk trick since I didn't have any buttermilk. Can't wait to try it with buttermilk. I also only had butter flavored Shortening so I used that. It's a simple recipe that I really liked. I did take it out at about 25 minutes. It was started to get really brown around the edges.

Roasted Chickpeas

I really like these! I had 1 can of Chickpeas so I split it between this recipe & Indian-Spiced Roasted Chickpeas. Both recipes had a different oven temp so I comprised in the middle with 425. I used a good quality granulated garlic, just a small dash of sea salt & cayenne. Stirred once. These are great! They came out crunchier than the other recipe.

Chipotle Honey Roasted Peanuts

These are excellent, even better the next day! I thought they were going to be way too salty because I tasted them before the sugar mixture, but once dipped in the sugar they were great! I used more Chipoltle Chili Powder & no regular Chili powder, otherwise followed the recipe. I took mine out a little bit early because I felt some pieces were getting a bit too dark. Thanks for the recipe!

Chicken Broth in a Slow Cooker

Delicious! I used a Rosemary Roasted Chicken Carcass, cooked it longer than stated, and it was flavorful & so good! It was too much basil for me, but it floated to the top & I was able to skim it out. Thanks for the recipe!

Meatloaf With A Bite

Yum! I had 2 pounds of very lean ground beef thawed so I used that. I didn't exactly double the recipe, but I did add more of everything. Didn't have saltines so I used my homemade WW bread crumbs, yum!! Cooked it in my Pampered Chef mini loaf pan so it made 4 mini meatloafs. Took it out at about 35 minutes. Delish!

Slow Cooker Texas Pulled Pork

Absolutely delish! We loved it, I made homemade WW Buns to go with it. Mine was a big 6 pounder so I cooked it on high a bit longer. Fantastic! Everyone loved it & I'm glad I have leftovers. I was even able to freeze some.

Fabulous Roasted Cauliflower Soup

I didn't love this, but I have decided I'm not as big a fan of cauliflower as I thought. I also thought my onions/garlic burnt. I wish I had taken it out earlier. I had it for lunch today after adding a little bit of Velveeta/Rotel Dip. I liked it a lot better. Next time I will follow this recipe using a variety of veggies.

Cardamom Granola Bars

I brought this to work today & everyone loved it. I only had about a half T of honey so I used 1/2 T Molasses & 2 T Sugar Free Syrup. A bit less Cardamom. Toasted Walnuts, Slivered Almonds & Sunflower seeds. Took it out at 23 minutes because I felt like the sunflower seeds were starting to get too dark. Delish! It ended up Granola, but everyone was very impressed.

Jack-O-Lantern Pumpkin Pancakes

I really liked this, but hubbie wasn't too crazy about them. I used Walnuts instead of choco chips since he is a diabetic. Oat bran instead of quick cooking. Just a bit of brown sugar & a bit of Splenda. My homemade pumpkin pie spice, buttermilk for the milk. It's a VERY thick batter & hard to tell when they are done, but I loved the flavor of them. Thanks!

Strawberry Oat Muffins

Really good. I used a mix of frozen strawberries and blueberries. My husband is a diabetic so I replaced the white flour with Whole Wheat Pastry. For the sugar I used 1/4 cup packed brown sugar & 2/4 c. Splenda. I sprinkled in some of my homemade Pumpkin Pie Spice and 1/2 cup walnuts. It only made 10 muffins so I must have made mine bigger. Good snack for hubbie though, thanks!
