About this Cook
My favorite things to cook
I love trying to make recipes vegan that aren't. There are so many vegan options, you will never miss the meat, dairy, and eggs in my recipes!
My favorite family cooking traditions
Making rolls on holiday mornings so they are fresh for dinner. The past few years we've been making a vegan batch and a regular batch.
My cooking triumphs
My 3 baking contest wins!
My cooking tragedies
Dropping, face down, my beautifully frosted birthday cake which I had just finished for my friends birthday.

Brown Sugar Oatmeal Pancakes
Great recipe! I made a couple changes and it turned out fantastic. I used 1 mashed banana in place of the oil and I added raisins to the pancakes. They were delicious! I also used vanilla soymilk in place of the milk and egg substitute for the egg. They were gobbled up very quickly!

Maple Carrot Cupcakes
These turned out pretty well. I made a few modifications to make them healthier and omitted the frosting and called them muffins. I used 1/2 splenda 1/2 sugar in place of the sugar and sugar free maple syrup in place of the maple syrup. I also used 1/2 applesauce and 1/2 oil in place of the oil. I used an egg substitute as well to make them vegan. Try this recipe, it's definitely a keeper!

Vegetarian Meatloaf with Vegetables
This recipe turned out pretty well. I didn't have the vegetarian worsteshire sauce, so I used soy sauce. I also used egg replacer to make it vegan. I also used ketchup instead of tomato sauce. It tasted pretty good, would make again.
