Pecan Pie Tarts

These are soooo good. I made them for my husband, because I don't really like pecan pie (until now!) I used frozen pie crust and got about 16 little pies using a mini muffin tin. I halved the filling recipe and had a little left over. This recipe is so much easier than others I have tried that involved cooking a corn syrup filling on the stove. Oh, and hubby popped 4 in his mouth, one right after the other. Now we're fighting over the remaining little pies! These are definitely worth trying!

Oatmeal Soda Bread

I made the recipe exactly, then added about 1 cup of craisins at the end. I shaped the loaf into a circle about 8 inches across and 2 inches high and baked it for 50 minutes. It puffed up nicely and looked so beautiful! But it was almost inedible because the inside did not cook through. I scrapped off the outer crust and it was delicious, but I was so disappointed not to be able to serve it. Next time I will bake for 1 hour and see what happens.

Mexican Whole Wheat Flour Tortillas

I tried this recipe using white flour and canola oil. I halved the recipe and it made about 12 tortillas (about 7 inches). Perfect for our burritos/tacos. WOW! The best burritos I've ever made. And it really wasn't THAT much extra work. (Considering I bought the chicken already roasted!) I used my stand mixer, using the paddle up until the point where you add water, when I switched to the dough hook. Rolled the balls and let them set for an hour. The cooking takes some practice (I had my heat too high at first) but they are still delicious. I will definitely be making them again - I don't know if my husband will ever let store-bought tortillas in the house again!

Irish Chicken and Dumplings

After four hours on the stove, I swore I would never make this again. Then my family tasted it. My 5 year old said it was the best thing he'd ever tasted. My mom (who loves chicken & dumplings) said it was the best she'd had, and my husband said "It's a keeper!" So I guess I just have to figure out how to reduce the time it takes to prepare. Next time I'm going to use frozen peas and carrots. My only change this time was to reduce the dumpling recipe by half, which made 6 large dumplings that filled the pot perfectly. I also added a little garlic powder to the dumplings. I think I will add some Italian seasoning to the stew next time, along with extra broth. Oh, I did add 3 tablespoons of chicken bouillon to the 3 cups of water that I simmered the chicken, etc, in.

Easy Greek Skillet Dinner

My husband liked his, but the rest of us didn't. It is definitely missing something. We love greek food, especially feta, and it just tasted bland. I'm going to try it again with alot of tweaking- more salt, some Greek Seasoning, a can of diced tomatos. Hopefully that will help.

Chicken Pot Pie IX

I've been trying alot of chicken pot pie recipes lately, and this one is the best! I boiled a frozen chicken breast half in water and a little bouillon, then used this for the broth. I used frozen peas and carrots and added one clove of garlic (chopped), 1 tsp of Italian Seasoning, and ommited the celery seed. I also used the frozen pie crusts. So easy and delicious!

Pecan Dijon Chicken

This turned out to be very good, but I had to increase the cook time. I used 2 chicken breast halves, which I had cut into thirds. I ended up cooking it for about 40 minutes. It still turned out very juicy and delicious. When I pulled it out of the oven, my 3 year old said, "Eew, that doesn't look very good!" But he gobbled it up anyway!

Quick Gnocchi

These tasted good, but what a lot of work and a big mess! This was my first time making them, and I guess they just aren't worth the time for me. I would rather have store bought tortellini. I used garlic mashed potatoes, and I still thought they were pretty bland. I ended up only cooking about 3/4 of the batch and the whole thing still took about an hour.

Easy Add-In Macaroni and Cheese

I'm giving it 4 stars just because I made some modifications, but it was awesome. I used cream of chicken soup, real butter and an Italian cheese mix. Next time I will cut back on the butter because it was super rich. I don't normally like mac n cheese but I loved this, and my husband was in heaven. This will go into regular rotation, I'm sure.

World's Best Lasagna

This is a great recipe! I had to make some changes to accomodate what I had on hand: used only 1 lb ground beef, used fresh thyme and basil, omitted parsley, fennel and italian seasoning but added dried oregano, and used no-boil noodles. I used the salt in the sauce and in the ricotta and I didn't find it too salty. It's definitely the best I've ever made and one of the best I've ever tasted. This will go into my "good enough for company" file!

Scones

This is a great recipe. I substituted brown sugar for the white sugar, and added chopped walunts and a little maple syrup and they turned out excellent. I made drop scones instead of kneading the dough since it was very sticky. It made 14 very large scones. I baked them for about 17 minutes and added a glaze of milk, powdered sugar and maple syrup. Yummy!

German Chocolate Thumbprint Cookies

I had a terrible time with these! I followed the tips and added 1/2 cup of flour, then refrigerated the dough. But it was way too dry to even roll into a ball! So I put it all into a sprayed 9x13 dish, added the filling on top, and baked for 35 minutes. They are still warm, but I don't think the consistency will even hold up as a "brownie". I admit that they are good, but it seems that they are too tempermental! Maybe I'll try again when it's not snowing out!

Baked Teriyaki Chicken

My picky 3 year old took one bite and said "UMMM... this is SOOOO good!" You can't get a better recommendation in my book. I made this without reading the reviews and next time I will line the pan with foil. I made a half batch of the sauce since I only had 1/2 the soy sauce and I only cooked 1 full chicken breast, cooked for 40 minutes. I recommend doubling the sauce also. I don't even normally like Teriyaki, but this isn't too strong and the ckicken is very moist. I marinated it for about 2 hours. Can't wait to try it on the grill.

Quick and Easy Alfredo Sauce

This is my "old standby" recipe. My whole family (including my very picky 3 year old) loves it. I love that it doesn't seperate like most Alfredo suaces when refrigerated, and it is just as good the next day. This recipe makes plenty for lunch the next day. I bought a plastic wisk specifically for this recipe, I make it so often. Just be careful when wisking the butter, I tend to get butter splatters on me so I have to remember to wear an apron! This is one of the best Alfredo sauces we have ever had and it's so easy. I will try adding nutmeg next time, but I can't imagine it getting any better!

Taco Casserole

This is an awesome, easy recipe. Even my 3 year old gobbled up two servings, not just at dinner, but also for lunch the next day. Next time I will add another can of tomato soup because it dries out a little in the refrigerator. This will be a regular in our house!

Divinity

This turned out perfect, thanks to my new stand mixer. It took me less than 30 minutes, start to finish. My mom used to make this when I was little and this recipe is even better than either of us remember. It will definitely be a "keeper" for us. Next time I will try it with gelatin to flavor it. I "dropped" it on to wax paper without too much trouble and it set up really quickly. Wonderful, wonderful! Can't wait to make more!

Creamy Caramel Flan

I never liked flan before, but I made it for my in-laws when they came to visit. My mother in law always brings flan to family parties, and she immediately asked for the recipe and declared this would replace the flan recipe she's been making for 30+ years! The consistency is great, and the cream cheese adds richness without being as heavy as a cheesecake. This will be on our holiday tables for years to come!

Mexican Wedding Cookies

I'm giving these 4 stars despite the fact that I screwed up this simple recipe! I only used 1 stick of butter (1/2 cup) and couldn't figure out why the batter was so dry. I added about 2/3 cup water and formed the balls anyway. I did use powdered sugar instead of granulated and added 1 tsp almond extract. Even with all these changes the cookies still turned out pretty good! Next time I will use the correct amount of butter and 1/2 tsp almond extract. I think they will be perfect!

Cottage Cheese Chicken Enchiladas

I'm from San Diego so I KNOW good Mexican food. These are the best I've had. Now that we live in Oregon and I've found this recipe, I make the best enchiladas in town. I've made them for family from SD twice and got rave reviews both times. I use a roasted chicken from the store to save some time. I also recommend making your own Taco Seasoning from this site. You won't have to worry about leftovers not being eaten! This is now my "go to" meal when we have company.
