About this Cook
I'm a mom of 2 great kids (ages 6 and 1) and work full-time, so I don't have as much time as I'd like to cook. I do a lot of weekend cooking and freezing for future meals. In my (limited!) spare time, I like to read, play word games, and if I'm really lucky, go to the gym!
My favorite things to cook
When I have time to cook a relaxed meal, I enjoy making Cajun/Creole things that involve starting with a roux, or more labor-intensive Italian foods, such as a lasagna with roasted vegetables. For everyday eating, I usually make things on the weekends like big pots of chili and spaghetti sauce, or roasted meats that can be eaten later as a second meal in a burrito or salad. My kids mostly live on pasta, but I'm an adventurous eater and love trying new things.
My favorite family cooking traditions
All-seafood Christmas Eve bonanzas, sausages and peppers at midnight on New Year's eve, baking homemade bread for Easter sunday.
My cooking triumphs
A dinner for 12 that I once hosted for a group of friends...the menu included spiced pecans for an appetizer, tossed salad, roasted vegetable lasagna, homemade garlic bread, and store-bought dessert! I had never cooked a meal by myself for such a large group before, but it went really well.
My cooking tragedies
red snapper...no matter what I do or how I cook it, it never seems to come out right! also, I often get sidetracked while cooking and tend to burn things.

Shrimp Scampi Bake
Delicious...I doubled the recipe for an office potluck...it is much easier than the scampi recipe I usually make. I was out of dijon, so subbed a bit of honey mustard. My co-workers, who have sweet tooths, loved it. I will use the dijon next time! thanks for a great dish.

Lemon Sugar Tea Cookies
I used the lemon juice/lemon zest combination because I didn't have extract, and I think it made them come out thinner then I expected. Next time I would try the recipe as written. Nevertheless, they had a good taste to them...my kids and spouse gobbled these up right out of the oven!

White Chocolate Macadamia Cranberry Dreams
Very good addition to my Christmas treat boxes! I omitted the macadamia nuts because I didn't have any on hand, and added the zest and juice of one orange. Delicious cookie!
