Spinach Dip
Mixed feelings... Kind of liked the taste, but not the texture so much. Next time will throw the onion and pimento into the food processor and add some cream cheese in order to avoid some of the "watered down" texture. I used light mayo, so that might explain the texture.

Tomato Feta Salad
Great recipe. I used a store bought feta cheese labeled as "mediterranean mix" (olives, sun dried tomatoes tossed in w/crumbled feta). It really brought some nice flavors to the salad. I also added some plum tomatoes. Next time will garnish it with some fresh spinach-just to add some more green. Thanks for the recipe.

Eclair Cake
Made it as a school project. My daughter was assigned to make a dish representing Monaco (which is influenced by French cusine). Easy to make and transport. It was perfect for moms and kids. Everybody loved it!! I think that a low sugar version would taste great.
