Fluffy Pudding Frosting
Loved this and got rave reviews, even from people who are not big "cake" eaters. Used vanilla pudding and frosted a layered "poke" cake with sliced strawberries between the layers. This was a perfect frosting for those times when you don't want an overly heavy and sweet frosting. My son dipped strawberries in the extra frosting, so this made a yummy fruit dip too...

Almond Maple Granola
My family loves this granola. When I make it, I make a double batch, doubling everything except the coconut. I also use whole almonds (chopped), walnuts, and sunflower seeds. For the dried fruit, we like dried cranberries and dried blueberries added to the raisins. I use unsweetened applesauce in exchange for the oil and have no problems at all with the substitution. I bake mine in batches in a thin layer on a cookie sheet for about 30 minutes at 350, keeping an eye on it during the last 10 minutes or so. Once you start eating this, it's hard to stop. Great!!

No Bake Cookies III
These were the best. I used butter and crunchy peanut butter because that is what I had. At first I thought they were going to be too runny, but they hardened up nicely and I was eating them before they had even cooled. Will make these often because they were so good and easy to make.
