Bean Quesadillas
I thought this was really good. I followed the ingredients except for the cheddar. I substituted a bag of Mexican cheese because that's what I had on hand. I also baked them in the oven at 350 for 8 or 9 minutes, flipping them halfway because they were curling. Next time I think I'll get my big electric griddle out and cook them with some olive oil. I was skeptical at first because I don't normally like black beans, but this surprised me. My husband liked it, and he's usually a big meat eater. He said it reminded him of Southwest Eggrolls. All we needed was some avocado ranch dip. We both agreed that it needed some seasoning, maybe taco seasoning. I'll definitely be fixing this one again. It's pretty cheap meal too!

Broccoli Cheese Soup
This was so good! Since I was cooking for two, I halved the recipe except for the cheese and the broccoli. I used a 10oz. chopped broccoli square and a half of a 16 oz. bag of broccoli cuts. Followed another reviewer's advice and reserved some chicken broth to mix with the cornstarch instead of water. Hubby even had seconds. Froze leftovers. Served with some sweet cornbread, this rivals Quizno's.

Cajun Chicken Pasta
I made this without the peppers, onions, and mushrooms. It was very good. To make it easier on me I put the chicken in a ziplock bag to coat with the seasoning. I used fettucine florentine instead of linguine. I also used an extra teaspoon of cajun seasoning (Tony Chachere's Spice N' Herbs Seasoning). Came out very yummy. Definite keeper.
