Sarah's Rice Pilaf
Don't be mad; I wanted to rate this recipe even though I made changes. I used spaghetti broken into 1 inch pieces because I didn't have orzo. I left out the garlic and onion because I wanted it to taste "plain" so that it didn't compete with my flavorful main dish. So all I used was pasta, butter, rice, and broth and it was delicious!! Greater than the sum of its parts for sure, and very easy.

Healing Cabbage Soup
This is one of my favorite recipes of all time. As written, it's a 4 star recipe. With a few generous shakes of red pepper flakes, extra chopped garlic, chicken stock instead of bullion, and a can of drained kidney beans, it is a 5 star cold-kickin', bone-warmin' soup! Try it! It's so cheap, easy, and delicious. I had two bowls today and can't wait for more tomorrow.

Pasta with Scallops, Zucchini, and Tomatoes
This tasted like 10 stars when I was done with it, but in all fairness I'll give it a 4 since I made so many changes. I didn't have garlic in the house (I freak out when that happens) so I sauteed half an onion with a bit of garlic salt instead. I used shrimp instead of scallops. I used fresh parsley as well as basil. I added a splash of white wine and a spoon of pesto. It was incredible. My husband loved it and he doesn't even like tomatoes, onions, or zucchini very much. So I did make a lot of changes, but this recipe has GREAT bones, and I would highly recommend that you try it and feel free to improvise.
