The biggest part of my time is spent as a stay-at-home mom to a lovely 1-year-old daughter. Although I have a handful of people whom I meet with as their spiritual director. Hospitality is a large part of spiritual direction and food & drink are ways that I let people know I care. So when a person comes to me for spiritual direction, they're first offered ice water, iced tea or hot tea, if it's fall then hot cider's an option, or perhaps hot Christmas punch around the winter holidays.
My favorite things to cook
I have a few signature dishes that are requested by friends...corn casserole (aka corn pudding), apple pie, sugar cream pie, slow-cooker smoked pulled pork, strawberry jello poke cake and sausage-potato soup, to name a few.
My favorite family cooking traditions
My husband and I love cooking in the fall. Chili goes so well with watching college football on tv. "Fall-is-in-the-Air" pork roast smells wonderful in the slow-cooker on a brisk fall day. For some reason we started eating spaghetti squash and Italian meatballs the past few Halloween nights :)
My cooking triumphs
I love how my friends and husband are always excited to eat what I cook. My latest triumph was putting together my daughter's 1 year birthday party and having all the food turn out great!!
My cooking tragedies
Using vanilla soy milk when I ran out of regular milk for a cream of broccoli soup. It tasted awful, but my husband still ate it!
Over-grilling corn on the cob in foil, it was more like popcorn on the cob!!
