Just made this for dinner last night. i followed the recipe exactly as written. Used butter (notice the difference between ingredients and directions). The only change i made was I used a hand mixer to puree it instead of a food processor. It was delicious and hubby said the recipe was a keeper. Thanks for sharing.

Melt In Your Mouth Blueberry Cake

I followed the directions exactly for the cake. The only change I made was to double the recipe because I wanted to make it in a bundt pan. I used a 12 cup bundt pan, anything smaller and the cake will overflow. it was a delicious and thanks for sharing.

Corn Fritters

We had these tonight for dinner along with freshly picked Jersey tomatoes from our garden and pork chops cooked on the grill. I used butter for the shortening followed the directions to a "T". They were insanely delicious. Thanks for sharing Joan.

Peanut Butter Cupcakes

I used an entire 16 oz. jar of extra crunchy peanut butter (about 1 1/2 cups), 1/2 cup of canola oil, in lieu of shortening, and some semi sweet chocolate chips. Although this didn't taste too much like peanut butter the texture was wonderful and they tasted yummy. Hubby loved them and will make again. Thanks for sharing.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

I made these today just to try out our new gas range to see if they would come out an even golden brown. We really liked them and I sent some over to our neighbor. They liked them so much she asked for the recipe. This is a keeper.

Ultimate Twice Baked Potatoes

I know, I know, when you review a recipe one should make it exactly as written. However, I had no cheddar cheese at the time. Looking in the fridge, I found a wedge of Yancey's Fancy Horseradish cheese from BJ's. I'm glad I used it because it gave the potato that extra pizazz. Other than that, I followed the recipe exactly as written. It's a keeper. Thanks for sharing.

Pan Cream Puff

Just made this today on my new gas range (wanted to try out the oven). I've only got one thing to say...WOW!!! This recipe was not only easy but delicious. I didn't use chocolate syrup simply because neither I or hubby like it. Sliced some strawberries and put them on top. I did have to increase the baking time for the cream puff to 35 mins. and it turned out a beautiful golden brown. It's a "keeper recipe" and I thank you for sharing it Zipity.

Cool Whipped Frosting

My cousin gave me this recipe last year. Since then that's all I've been using on my cakes. If you don't like that sickening sweet icing, this is the recipe to use. It's light and tasty. Tonight I used chocolate pudding.

Spinach Lentil Soup

Best Tuna Melt (New Jersey Diner Style)

I know you're supposed to follow a recipe to the tee, but this looked so inviting I decided to try it anyway. I substituted packaged Italian bread and American cheese (this is what we had in the house at the time) but I followed the recipe exactly for the tuna and it turned out to be delicious. The next time, I will make it my business to have rye bread and Swiss cheese on hand because I think they will not only enhance the flavor but make a delicious sandwich even better. Thanks for sharing.

Downeast Maine Pumpkin Bread

This recipe was outstanding. I didn't have any canned pumpkin but we did have stored sweet potatoes from last year's garden. I simply microwaved them in their skins, scooped out the cooked potato, pureed them in the food processor and then followed the recipe exactly as written. The results were delish. Thanks for sharing.

Swiss Chicken Casserole II

Made this last night for dinner. I used a can of cream of celery soup and added cut up pieces of broccoli to the cream sauce. I took the advice of some reviewers and put it under the broiler when it was finished cooking. At some point I will try the sauce on a bed of cauliflower or zucchini instead of chicken and use it as a side dish. Hubby said this recipe was "a keeper".

Turkey a la Oscar

We had this for last night's dinner and it not only was picture perfect but also delicious. As suggested by a prior reviewer, I used skinless boneless chicken breasts which had to be pounded a bit and fresh asparagus cooked in the microwave. The chicken had to be cooked more than 3 minutes on each side. I used Knoor's Hollandaise sauce made as directed on the packet but next time will add a little lemon juice. Easy to make and totally delish.

Awesome recipe even though I forgot to add the cinnamon. As another reviewer suggested, I substituted 1 Tblsp. of pineapple juice for the glaze and added a Tblsp. of crushed pineapple. I think I might add raisins the next time. I also drained the zucchini,
