Baking Mix Blackberry Cobbler

I made this recipe exactly as written the first time and found it to be too sweet even though it had a good flavor. Just experimented with it last night. I used the cake portion of the recipe and instead of the fruit/sugar/water portion added a 29 oz. can of drained peaches and lightly sprinkled a brown sugar/cinnamon mixture on top before baking. Everyone really enjoyed it. I think the next time I make it I'll try some type of fresh fruit just thrown in. Easy to make and thanks for sharing this recipe.

Stuffed Guinea Squash (Eggplant)

I saw this recipe and wondered how it would work with zucchini (they're coming out of my armpits). At any rate, I followed the directions, as printed, and I'm here to tell you it was absolutely delicious. I did use Cabot's Seriously Sharp cheese to give it a little extra kick. So, if you have a lot of zucchini in your garden to get rid of, this is a great dish. Thanks for sharing.

Hungarian Goulash III

We made this two nights ago for dinner and really enjoyed it. The only thing different I did was not add salt to the recipe (Hubs is salt restricted). I, on the other hand, am not salt restricted so I added it after it was on my plate. I leave you with one last comment - YUM! Thanks for sharing this delicious recipe.

Orzo and Rice

Made this last night for dinner. We found it to be a little bland (didn't use bouillon cube - to much sodium for a sodium restricted diet). Substituted 2 cans of chicken broth for water. To alleviate some of the blandness we topped it off with some pecorino romano grated cheese. Was pretty good with cheese on top. Thanks for sharing.

Carrot Burgers

We made these for last night's dinner and they were delicious. I did omit the sugar and salt from the recipe (hubs is on salt and sugar restricted diet). Didn't need the sugar, carrots are sweet on their own, and I put salt on my own burger. I put everything through the food processor so no need to cook carrots. Also, processed the cornflakes. It takes a little longer to run everything through the processor but well worth the effort. My patties held together like they had superglue mixed in. I found that 2 cups of whole cornflakes are a lot less than 2 cups of crushed/ground cornflakes. Great for a meatless dinner. Thanks for sharing this recipe Phyllis.

Ghirardelli® Dark Chocolate Truffles

If you don't like dark chocolate then this recipe is not for you. It's an easy recipe. I did doubled the recipe and suffice it to say I have them coming out the armpits. As other reviewers have stated, I used a small cookie scoop (about 1 tsp.) and left the bottoms flat. Unfortunately, they were in the fridge over night and the next day they were hard as rocks so I left them sitting for about an hour and started scooping from the outside of the mixture. We rolled them in toasted coconut, roasted hazelnuts, pecans and unsweetened cocoa. The flat bottoms sit nicely in the mini baking cups and don't roll all over. Delicious and very filling.

Pignoli Cookies I

This is the third time I've made this recipe. The first time my mom got me almond paste from a bakery, the second time I bought canned paste at the supermarket and this year we got Solo almond paste at the supermarket. If you have to buy it at the supermarket, my advice is to buy Solo (as suggested by another reviewer). More tips: I always use parchment paper, even for the rest of my cookies (slide right off). Bake pignolis til very lightly browned around edge (they won't be too gummy). Make sure you have enough pignoli nuts (I bought 2 bags and had very little left over) and those that were left over I ground up and used as topping for the cookie press cookies. All in all this is an outstanding recipe and I thank you Adele for sharing this recipe.

Italian Sausage Soup II

Great recipe with unusual spices. As suggested, we added Pecorino Romano grated cheese to the finished product and believe it or not it brought everything together. Had to add more chicken stock because hubby likes liquidy soup. Yum!

Applesauce Cake VI

Delicious cake, not too moist and not too dry. Good texture and pleasant taste that is not overpowered by a lot of spices. I made it in a 12 cup bundt pan that worked out perfectly. Hubs informed me that the recipe was a keeper. Thanks for sharing Coral.

Grandma VanDoren's White Bread

Quick Quiche

California Grilled Veggie Sandwich

When I told the hubs we were having grilled veggie sandwiches for dinner tonight he was extremely skeptical. I made two changes. First off, there wasn't a loaf of focaccia bread to be found in the entire area so we used rolls. Secondly, neither of us like feta cheese so we used crumbled extra sharp cheddar cheese. Everything else remained the same. After his second sandwich, I was informed he would eat this meal anytime. Everything complemented each other. YUM!!!!

Slow Cooker Tapioca Pudding

I made this yesterday and it was awesome and extremely easy to make in the slow cooker. I doubled the recipe and used large pearl tapioca which I did not soak overnight. Followed the directions to a tee. We used 2% milk (we call it whitewash) and added 3 tsp. of vanilla extract (double batch). I cooked it on low and it was finished in about 3 1/2 hours. The one thing everyone should know is, it has to be stirred every half hour. Make sure to scrape the sides and bottom of the slow cooker otherwise it sticks. We liked it a lot and will be making it again and again. ADDENDUM: I made this again and used 1% milk. Had to cook a little longer but was just as good. Also, used the large pearl tapioca again. Don't forget to scrape sides and bottom every half hour so it doesn't stick!

Heavenly Angel Food Cake

Excellent cake, great texture and fairly easy to make. As suggested by a prior reviewer, I used my Kitchenaide mixer on #9 to beat the egg whites and #1 for the flour/10X mix. Thanks for sharing.

Best Cream Of Broccoli Soup

Just made this for dinner last night. i followed the recipe exactly as written. Used butter (notice the difference between ingredients and directions). The only change i made was I used a hand mixer to puree it instead of a food processor. It was delicious and hubby said the recipe was a keeper. Thanks for sharing.

Melt In Your Mouth Blueberry Cake

I followed the directions exactly for the cake. The only change I made was to double the recipe because I wanted to make it in a bundt pan. I used a 12 cup bundt pan, anything smaller and the cake will overflow. it was a delicious and thanks for sharing.

Corn Fritters

We had these tonight for dinner along with freshly picked Jersey tomatoes from our garden and pork chops cooked on the grill. I used butter for the shortening followed the directions to a "T". They were insanely delicious. Thanks for sharing Joan.

Peanut Butter Cupcakes

I used an entire 16 oz. jar of extra crunchy peanut butter (about 1 1/2 cups), 1/2 cup of canola oil, in lieu of shortening, and some semi sweet chocolate chips. Although this didn't taste too much like peanut butter the texture was wonderful and they tasted yummy. Hubby loved them and will make again. Thanks for sharing.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

I made these today just to try out our new gas range to see if they would come out an even golden brown. We really liked them and I sent some over to our neighbor. They liked them so much she asked for the recipe. This is a keeper.
