About this Cook
I am a stay-at-home mom with four kids. During the school year, my energy is directed towards home schooling my two older children. My summer months are full of gardening, home improvement projects and having fun with the family.
My favorite things to cook
Almost anything stir-fry. I love dishes with a peanut based sauce. I also enjoy making special breakfast for my family on the weekend. And I love desserts.
My favorite family cooking traditions
No Bake Cookies during the holidays are a must. We also must have "pink stuff" at every family potluck. (cottage cheese, whipped cream, pineapple, mandarin oranges, and strawberry jello)
My cooking triumphs
For my two sons' birthday party (both born on March 30th five years apart) I went all out for the food. In addition to making Hamburger Cookies in honor of April Fool's Day, I also made many kid friendly foods and several that the adults raved over. They named it a culinary success.
My cooking tragedies
Oh, there are so many to choose from. How about the time I was 12 years old and accidentally substituted baking soda for the baking powder in some pancakes. I couldn't figure out why they were not cooking. So my dad came in and tasted one to see if he could help me out. I will never forget the look on his face when all that baking soda hit his tongue! Since that day, I have always been extra careful that I do not mix up baking soda and baking powder.

Refried Beans Without the Refry
I've made this several times. It is so easy and good. I don't worry about chopping up the onion or pepper. I just quarter the onion and seed the pepper. Then I throw them in and they get chopped up in the end. I also don't put as much salt as recommended. It's just too salty that way. But I at least double the cumin. We love that taste. I use my Oster hand blender to chop the beans after they are done cooking. I would guess that I remove about 2 cups of water from the beans before chopping them. I normally make a double batch and have extra burritos for left overs.

Buttermilk Pancakes II
My family loves these. I have made them with fresh buttermilk and dried. When I made them with dried buttermilk, I found that they were more flat than with the fresh. So the last time I made them, I did not add the 1/4 cup milk. They turned out much fluffier. However, I think I prefer fresh buttermilk.
