Cuban Pork Roast I
Came out right the second time I made it. I used the crockpot the first time. Worked better for me in the oven. The flavor was amazing. I didnt find it overly citrus at all. I also added some emeril's essence one of the best things Ive made from allrecipes

Eggplant Parmesan II
Came out well. my bro is a meat man but really liked it. I followed the advice about weeping the eggplant and I baked them longer than the recipe but still not long enough. next time I will bake them at least 10 minutes on each side. Also one large eggplant was plenty of eggplant for me. Next time I think I will use the Trader's Joe's frozen breaded eggplant, which only has to be microwaved for 2 minutes. that will make things much easier. UPDATE: I have made this twice using the trader joe's frozen breaded eggplant. just as good but much easier

Okra, Corn and Tomatoes
I'd give it a low four because I think the corn took away from the flavor of the okra (my nephew, who enjoys a lot of the vegetable recipes I get off this site, agreed). I used Trader Joe's frozen sweet corn. Plus I only used a 16 oz bg and it was still way too much corn. I'd use less or no corn next time. Otherwise the flavor was good. I'm surprised people have a problem finding file powder. It is gumbo file and should be available with the creole seasonings in most big supermarkets.
