Pumpkin Apple Streusel Muffins
I made this in a 9X13 pan as a coffee cake and baked it for 45 minutes and it came out great! I used half oil and half applesauce and had to use a little more butter for the streusel topping in order get all of the ingredients mixed in and it came out amazing! I brought it to work for my breakfast day and everyone loved it! Next time I'll try using all applesauce and no oil, egg whites, and whole wheat flour and/or oatmeal (I didn't want to make too many changes the first time I made the recipe!) to make it a little healthier. I might also try foregoing the streusel topping and just sprinkling cinnamon sugar or powdered sugar on top instead. All in all a great recipe!

Easy Pasta Fagioli
The recipe was great! I was a little nervous about the 4 cans of tomato sauce (I don't like tomato soup and was afraid it might taste like that) but I decided to try it and I'm glad I did. The only changes I made were to add 2 bay leaves, puree about half of the beans to make the soup thicker, and I used Pipete pasta because I couldn't find Ditalini. Served with grated parmesan cheese on top--YUM!

Peanut Butter and Banana Smoothie
This was wonderful! I blended the honey in with the other ingredients instead of garnishing with it. Next time I think I'll add some oatmeal as well. Thanks for a great smoothie recipe!
