Whole Grain Waffles
I just made these for myself and my housemate. I made the following substitutions: for the pastry flour I just used regular whole wheat flour, for the milk I substituted homemade almond milk (almonds and water blended), for the wheat germ I substituted oats and for the applesauce I substituted mashed pear. I used all the same amounts. I found that, probably because of the water and juicy mashed pear, I had to cook these a little longer so they weren't mushy inside. Still, when they came out of the waffle iron my housemate and I both agreed they were delicious! They've got a great flavor and richness without being heavy. I'll definitely make these again! For a topping, I mixed the remaining mashed pear with some crushed pieces of almond and a bit of powdered sugar. I think this made the waffles shine even more than regular syrup!

Simple Whole Wheat Bread
This recipe was easy and resulted in two delicious loaves of bread. I'll definitely be using it again and again!

The Best Thai Coconut Soup
This tastes very good. The flavors all mesh well. Though I didn't have any lemongrass, I'm sure it would have been great in it. The one thing I'll say is that it's much thicker than I'd expected. It doesn't seem so much like a soup I'd eat on its own, but would be great over rice (as I now see is mentioned in the description). So, my rice is cooking and then I'm going to enjoy!
