About this Cook
I'm a thirty-something single mother of three kids. My Mother didn't cook much and my Father didn't know how to do anything but fry greasy foods. So I always wanted to be a good cook. I have three kids with very different tastes that provide a real challenge, when trying to cook. I'm a school nurse and very busy so by the end of the day I'm looking for something quick and nutritious. On the weekend and in the summers, I really strike out and try new, more difficult recipes.
My favorite things to cook
I really like to try new recipes. Some are good, some are so-so and others are awful! I make some really awesome beef enchiladas, pepper steak with rice, meat loaf, pot roast and egg rolls.
My favorite family cooking traditions
We do alot of baking at Christmas. I love the way it makes the house smell and it is a really great and personal gift.
My cooking triumphs
I'd say making something using phyllo dough. It wasn't easy!
My cooking tragedies
In the early days I always over cooked or under cooked. I either had food so bland no one liked it or so salty or spicey no one could stand it.

Easy Baked Chicken Cordon Bleu
It was pretty good and would do just for a family night or close friend dinner. For a nicer meal, I'd stick to a more traditional recipe.

Chicken Francese
It says to cook the chicken until half way done but then it says to put in the other ingredients and just let it come to a boil then serve. If we did that, the chicken would not be done. Also there is nothing to make the heavy cream thicken. So it was like half-cooked chicken in thick milk. If you made a rue out of the cream and flour, let it simmer for a while and cooked the chicken more, it may of been better.

Blue Cheese Potatoes Delmonico
I thought it was okay. It was very rich. I don't suggest it for anyone with kids. None of my kids liked it. I'd rather have scalloped or augratin.
