About this Cook
I am a purist and believe that processed foods are bad for your overall diet. Too many calories and unwanted fillers. I try to make as many things from scratch. Since that requires alot of time, I cook in large batches and freeze for later. This allows me time to make my own breads, stocks, and sauces.
My favorite things to cook
I love to experiment. I usually start with a recipe but amend it to my own tastes and pantry availability. New techniques never scare me. In fact, I love the challenge! I have only one rule...Never try a new recipe for guests. Always experiment on my family first. I have to admit, I have made plenty of "mistakes". I love all types of cuisine and will try anything once. I can't think of a single food I don't like. It's all good!

Pineapple Bread Pudding
Fantastic recipe. I made it exactly as listed and then added chopped pecans, which provided a wonderful texture, as well as flavor. The pudding reminded me of a pineapple upside-down cake. Will definitely make again, but will reduce butter and sugar each by a 1/4 cup.

Fruited Curry Chicken Salad
I love curry and this was a wonderful idea. I made this a lowfat version by adding only half of the mayonnaise and substituting the other half with nonfat yogurt. Yogurt goes great with curry, so it's a win/win all around. I had no grapes or apples, so dried apricots became my fruit of choice. Staying on the lowfat theme, I left out the nuts and added more celery. Can't wait to have more leftover chicken!

Leftover Chicken Croquettes
This is a great idea for leftover chicken. I spiced it up a bit for my tastebuds by adding sundried tomatoes, pepperoni, and oregano. I added plenty of eggs and let sit overnight. The patties stayed together nicely when frying. The trick is to shred the meat, do not chop.
