I needed a quick recipe to use up some extra baked potatoes my over zealous boyfriend made and this worked perfectly! I left out the onions, as we didn't have any, but it seemed just fine. I also didn't have enough cheddar for the 1 1/2 cups, so I put in what I had and then tossed in some cream cheese and romano as well. Absolutely fantastic and I'll be sure to make these again!

Very good, and very easy! I've made it several times a week since I first tried it and have been experimenting with herbs to vary the flavor (rosemary, thyme, etc)...but the plain version is wonderful! I took it to a staff meeting and my colleagues have been asking me for the recipe ever since.
