About this Cook
Hello fellow food crafters! I've really enjoyed this website, and would spend more time on it, but it takes me away from the kitchen! My mom taught me to cook as a young girl, and many of the recipes today that "wow" my dinner guests, come from those meal ideas. My husband is my best critic, he loves EVERYTHING I make, haha! It's great for my ego!
My favorite things to cook
comfort foods with a more carb friendly approach. Soups, I've just discovered within the last year, how to really whip out some awesome soups, I didn't I had it in me!!
My favorite family cooking traditions
I would say, a "tradition", that I've carried over to my own kitchen, CLEAN AS YOU GO! It sure makes a huge difference when I finally call it a day.

All Day Apple Butter
FABULOUS!! What an easy, no fuss recipe that is going to be in each holiday gift basket that I do this year!! Following the advice of other reviews, I made a few slight changes, adding only 2 cups of Splenda instead of sugar, and after cooking in the crockpot all night, I removed lid for a few hours and used an immersion blender right before loading my jars for the canner. Perfect texture, great recipe!! I'm already on batch #2!

Seasoned Turkey Burgers
Absolutely FUN in our mouth! My husband was so surprised that he actually enjoyed it, he felt for sure he would not like it because it wasn't ground beef-ha! This was so good-I dipped the patties in panko crumbs and then spritzed them with EVOO, and cooked them on my George Forman grill-stuffed them in a warm pita filled w/ lettuce, red onion, feta, and dijon, really moist! served with a pot of fresh asparagus soup, what an excellent idea-thanks!

Sour Cream Chicken Enchiladas
This was a great base for us, I wanted to share our variations-as I didn't have all the ingrediants it called for on hand. I substituted just a few things, and my husband had three helpings! I used 1 16oz can of red Enchilada sauce for the jalapeno salsa, and 1 16oz can of green chili's, not green salsa. We prefer corn tortilla's and I used jalapeno jack cheese alongside the cheddar, to round out the 2 cups. To the sour cream mixture I added 3 quick cooked fresh jalepeno's and pureed them in my food processor. I used the leftover Beer Can Chicken we had from the night before, and I ended up with 20 total, 2 lg. pans. Definitely fun in your mouth!!
