About this Cook
I am all about family. I have 4 kids and I'm in the kitchen all the time. (I have a beautiful kitchen now, so I don't mind being in there, but I have to keep it exciting.) My husband is awesome and enjoys cooking with me... he even does the dishes too! We've lived in four different states over the last decade. I loathe packing boxes, but I like having new places to explore. I go out with the kids a lot to "be tourists," shop for bargains, or enjoy the nature of the season. I take lots of pictures. I'm happiest when I'm serving those around me. Whether for church, neighbors or family, I'm always busy doing something. If I ever do get a break, I like to quilt and keep memories. Afterall, the kids will keep growing and the world will keep changing. I want to remember how good it is.
My favorite things to cook
I love whole grains, fruits and veggies. I get a kick out of trying new foods: that's why I love this website! If I buy a jicama at the market, I can search for a dozen things to do with it. And for years, the only meatloaf I made was a recipe from my mom; now I never make the same one twice! I love to cook Asian food, especially stir fry; Italian is a close second; and my family thinks I'm the master of smoothies. Horray for good food!
My favorite family cooking traditions
We celebrate Chinese New Year every year with Gyoza, fried rice and usually a new, experimental dish. The kids dress up in their Chinese clothes, we set the table with all our Asian dishes and chopsticks, and dad teaches them a few phrases or how to count to ten in Mandarin. (No, we're not Chinese. My husband served a mission with Chinese people and we just like to remember the culture. We're also planning a trip to Bejing this summer!)
My cooking triumphs
Watching my kids learn to cook for themselves. My 9 year old son loves to experiment with food--some good, some only he will eat. My 11 year old just won a 1st place ribbon in 4H! They're all willing to try new foods. And even the littlest one loves to "help out" in the kitchen. Cooking is only fun when it's shared!
My cooking tragedies
Why can't I remember to put salt in my baked goods?!?

Jumbo Breakfast Cookies
These cookies are so fun to make & very forgiving. I call them "clean out my pantry cookies" because I get out my large glass measuring bowl and just start dumping in the dregs of all my cereals, dried fruit, nuts, seeds, etc. until I hit the 6 cup line. They’re different every time I make them! For the “base” of the cookies I do substitute in 1 cup brown sugar and 1 cup whole wheat flour. Also, if your cookies are flat or spreading too much, try adding 1/3 cup of wheat germ or oat bran to the mixture; you can also substitute non-hydrogenated vegetable shortening for up to half of the butter. (Shortening holds its shape better.) And although I agree that these aren’t exactly healthy for breakfast, they sure are better than average for a cookie!

Light Wheat Rolls
Heavenly! I take each rectangle of dough, brush it with butter, and roll it up jelly-roll style. Then I slice it into 1 inch medalions. It seems a little faster to me than rolling each strip individually, and I love the way they pull apart when you eat them with butter in between each layer. Awesome recipe: thanks!

Bacon Wrapped Hamburgers
Loved it! We don't have an outdoor grill, but the flavor was great right off the frying pan. I think I'll take other reviewers' suggestions and pre-cook the bacon a bit next time. We got pretty splattered!
