Ellen Szaller's Mashed Potato Pancakes

My son and I made these for a quick late night dinner. I had been looking for a long time for a good recipe and this is it. I did make a couple of changes. I omitted the corn syrup and nutmeg. I also added 1/4 cup parmesan cheese. These turned out perfect. We topped them with sour cream and I am planning on making another batch right now. We used left over pancakes for a modified eggs benedict. We topped them with canadian bacon, poached egg, and hollandaise sauce. So delicious.

I made the full fat version of this recipe and it was FANTASTIC. If I am going to make pancakes, I want the real deal. They are so rich and delicious.

Impossibly Easy Breakfast Bake (Crowd Size)

This is our traditional family Christmas breakfast. I can make it up the night before and put it in the oven Christmas morning while we are all opening gifts. Really good.

Angel Chicken Pasta

Really good recipe. I grilled chicken breast first and then added the sauce and heated through in the oven. As others suggested, I doubled the sauce and am glad that I did. I also added fresh mushrooms to the sauce. Fantastic tasting! I had fettucine on hand, so that is what we used. I will make this again, soon!

Mock Tuna Salad

I must admit, I was VERY skeptical about trying this recipe, but I am so happy that I did. I didn't have green onions, so I used onion powder & it was fantastic. Shocking how it tastes like tuna. Thanks so much!

A really good, versatile recipe. I used all organic ingredients to really boost the nutritional value. I also added a bag of trail mix that had nuts, coconut, and dried fruit all in one. It is very hearty and a great energy snack for my active family.

Bob's Habanero Hot Sauce - Liquid Fire

My husband is a habanero fanatic and loved the flavor of this sauce. I use it as a salsa base. I simply pulse in a few tomatoes and a white onion to a small amount of the sauce. A little sauce goes a long way.

Loco Moco

I made this to mimic the more traditional recipe that we had on our trip to Hawaii by using a hamburger patty (seasoned with worchestire and pepper) instead of spam. I also made my own brown gravy by using the hamburger drippings, vegetable broth and corn starch. Delicious.

Pork Dumplings

Really good filling. I had trouble with the folding of the dumplings - because I'm all thumbs, so I decided to rolls these like mini egg rolls. Delicious. We dipped them in a red chili thai sauce and loved the flavor. I froze 1/2 of this recipe on baking sheets and placed baggies of 10 in the freezer. My son loves them for a quick after school snack or a quick weekend lunch.

Vietnamese Sandwich

Very good. I found about 20 different chili sauces in my market and didn't know which one to use. I opted for a Thai red chili garlic sauce. The sweet/spicy flavor was perfect. I think we may try another type of bread with this. It was a little difficult to manage and distracted from the fresh flavors. Maybe a Naan or Pita would be better. Love the flavor combination of the filling. Yum!

Double Tomato Bruschetta

YUM! I made these as an appetizer one night for supper & we didn't eat anything else. So good. I had left over capers in balsamic vinegar that I thought I'd try on a few slices & it was delicious. This recipe served with a salad would make a wonderful lunch or simple supper!

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

German Pancake with Buttermilk Sauce

Chicken Shawarma

I loved this recipe! I am always looking for more international recipes other than mexican and italian & this was fantastic. We used boneless chicken breasts & I added fresh mint to the sauce just because I love the taste of mint in greek food. Very good!

Sour Cream Chicken Quiche

Love, Love, LOVED it! I doubled the recipe so we'd have some leftovers & am so glad that I did. My entire family thought this was divine. I used a rotisserie chicken from my local deli & doubled the salt like someone else suggested. It was perfect. My small family of 3 ended up eating this for every meal & managed to eat both pies in 2 days. My son is already asking that I make it again. This one is a keeper for sure! Thank you so much!!!

Coconut Brittle

Fantastic Recipe! My family opted for almonds, but other than that - we followed amounts and times exactly. This brittle is light and crisp. It doesn't stick to your teeth and has a wonderful flavor. I'm making another batch for a Christmas party. Thanks!
