Big Soft Ginger Cookies
These were fantastic! My family was eating them as fast as I could get them baked. I followed the recipe ingredients exactly. The only thing I didn't do on the second batch is flatten them slightly before baking. I found they stayed a bit more fluffy just leaving them rolled in a ball. Moist, tasty, perfect! Thanks for the recipe!

Easy Mexican Casserole
This was fantastic. I normally would have used refried beans with a dish like this, but the chili beans were perfect! They added just the right flavor to it. Our whole family loved this recipe. We will definitely be eating it again. I don't think I will crush the chips next time though. Instead I'm going to try leaving the chips whole. Some of the chips were a little tender, and we all prefer crispy things to stay crispy. We still loved it though just as it is.

Beth's Spicy Oatmeal Raisin Cookies
EXCELLENT! I lack the ability to be a great baker, so I don't bake many things, especially oatmeal cookies. They are my husbands favorite, but I don't make them because every time I have tried, they are hard as rocks. This recipe was something that even I can make. They turned out fantastic! The whole family loved them. They are soft, and chewy, and we love the great flavors. I did take some advice from previous reviews, and when my first batch came out a little flat, I added 1/2 teaspoon more of baking soda. I made more 48 hours later when they were all gone. This time I put in 2 teaspoons of baking soda, and love the thickness of the cookies, it's perfect for us. I also kept the dough in the fridge while baking each batch. Couldn't ask for a better tasting cookie! Thanks for the great recipe, that even the baking challenged can cook properly :).
