Spicy Black Bean Potato Salad
About this Cook
I never used to like to cook and my twin sister did. Then about 10 years ago I just started to love to cook! I just got married. I guess it's true - the way to a man's heart is through his stomach. Now I am teaching my daughter to cook! How fun! I hope she loves it as much as I do some day!
My favorite things to cook
I love trying different things. Polenta, cous cous, greek, paella, thai. I love making pasta. My husband is a huge meat & potato fan. I really like trying all different kinds of recipes!
My favorite family cooking traditions
Growing up we had dinner every night at 5:00. Now that I am grown and have my own kids, it makes you really appreciate it! How did my mom do it? She is an amazing woman! I still make her dishes to this day! Total comfort food! Boiled dinner, mac n cheese, veg beef soup, hot dishes, spaghetti. Yum!
My cooking triumphs
I've always made good lasagne & chinese food. I've always liked trying new things and then improving on them. Cheesy potatoes, dill potatoes, crab legs, asparagus & pasta, etc.
My cooking tragedies
My only problem is that I always make way too much of something. Since we don't eat a lot of leftovers - I am working on making smaller portions of the things that I make.

Tater Taco Casserole
We love this dish! We top the ground beef with black beans and corn. Then we top that with 2 cups sharp cheddar. (We don't use the cheese soup.) Then the tater tots and bake until they are golden & crispy! We serve with salsa & sour cream! If we have black olives & green onions, they go on top! Delicious!!!!!

Broccoli and Cauliflower Casserole
I made this using 1 cup brown rice, 28 oz frozen broccoli & cauliflower, 1/2 lb processed cheese & about 1 T minced garlic. I melted 1/2 stick butter and stirred in the crackers and topped with that. I can't imagine using a whole pound of cheese! We love cheesy and we thought the 1/2 lb was almost too much. I will definitely make again the same way I did this time. Very good dish!

Pumpkin Upside Down Cake
This is so good! I made it exactly as written except I added some cinnamon & vanilla to the pumpkin mixture and after I drizzled the butter on, I sprinkled about a cup of walnuts on. After this was cooked, I let it sit in fridge for about an hour and a half. Then I flipped it into a plastic 13x9 container w/ a lid and covered it and put back in fridge. Huge hit at the potluck! Thanks!
