Salmon with Tomatoes

I can't believe it's taken me so long to review this recipe. I've been making this for years now and it has to be my favorite from this site...hands down! But, I did make one change...I use 2 CANS of diced tomatoes with the liquid instead of 2 fresh tomatoes. I love the liquid it produces mixed with all of the spices. It's incredible over rice! This will continue to be in my main rotation of meals. Thanks for sharing!

Beefy Chinese Dumplings

WOW! These were amazing! I used chicken, but otherwise followed the recipe exactly. I also scaled it down (using only 1 lb of chicken) and it still made a ton of dumplings. But, I'm glad to have the leftovers. These truly are worth your efforts. It does take some time to make each dumpling, but the time you spend making them you get back with the short cooking time. Just excellent...thanks for the recipe.

Stir Fried Sesame Vegetables with Rice

EXCELLENT! I used coconut oil instead for a little extra health benefit. I also used crushed (jarred) ginger, as I didn't have the root available. It turned out very tasty. This will become a staple in our house! My little ones loved it too! You must try this easy dish.

Easy Slow Cooker Ham

This ham is by far the best ham I've ever had. I made it today (Easter Sunday). It was juicy, tender and just delicious! In fact it was falling off of the bone before I could carve it. I followed the recipe exactly except I made one change...I used orange juice instead of apple cider (didn't have any) and it was fantastic! I have to wonder why other reviewers rated this recipe so poorly. Maybe the cut of meat? I don't know, but I used a butt. Maybe there's more fat to it...not sure. But it truly was the best ham we've ever had. My husband, 3-year-old and 4-year-old all agreed!

Pineapple Enchiladas

This is a very kid-friendly meal, but adults will love it too! I actually added some tomato sauce to the enchilada sauce to cut down the spice, as another viewer had suggested. I also added a package of frozen spinach (thawed and drained) and used twice as much sour cream. It was fantastic! Next time I will make double, so I can freeze it. Thanks for sharing!

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

I'm reviewing this recipe again, because I can't stress enough how AMAZING it is! My toddlers still gobble it up! It definitely is a gourmet meal. You must try this recipe.
