Ukrainian Chicken Kiev

Reviewed: Jan. 14, 2012
This was very good. I'm impressed I actually was able to contain the butter, so that once you cut the chicken the butter squirts out. I didn't use toothpicks...I just placed it in the pan seam side down first. I browned both sides then put the whole pan right in the oven for 20 minutes at 400 degrees. Next time I will have to add more of the spices. I liked the flavor, so I wouldn't change the spices...just add more of them. I will be making this again. Thanks for sharing my favorite dish from the famous restaurant...the Russian Tea Room in NYC.

Artichoke Bruschetta

Reviewed: Nov. 3, 2011
Excellent dip! I did have a few changes...I added a little cream cheese and used onion powder in stead of the fresh onion. But with the small tweaks I made, this tastes just like Costco's artichoke dip, which I can no longer buy because I don't belong anymore. And now, I don't have to keep asking my mother-in-law to pick a container up for me every time she goes to Costco. Thank you for sharing!

Portobello Pot Pie

Reviewed: Oct. 25, 2011
Great Veggie recipe! I used 2 tsp of Italian seasoning instead of sage and thyme (didn't have any) and added some zucchini to the mix. It was a wonderfully flavorful meal. Thanks for sharing. I will make again and probably experiment with more veggies.

Bread Machine Pizza Dough

Reviewed: Sep. 18, 2011
I can't believe I've been using the recipe that came with my bread machine for all these years...this is going to be my new standard recipe for pizza dough. It is awesome...I kept trying to figure out why one of my kids didn't like my homemade pizza...what kid doesn't like pizza?! Well, this crust did the trick. I added garlic powder and basil to the dough, like other reviews. Great, simply great. Thanks for sharing!

Salmon with Tomatoes

Reviewed: May 16, 2011
I can't believe it's taken me so long to review this recipe. I've been making this for years now and it has to be my favorite from this site...hands down! But, I did make one change...I use 2 CANS of diced tomatoes with the liquid instead of 2 fresh tomatoes. I love the liquid it produces mixed with all of the spices. It's incredible over rice! This will continue to be in my main rotation of meals. Thanks for sharing!

Apple Pie by Grandma Ople

Reviewed: Apr. 22, 2011
Sooooo yummy! I did add 2 tsp of cinnamon, 1/4 tsp of nutmeg and 1/4 tsp of ground ginger to the sugar mixture. But, the secret ingredient, which made this so yummy, were a couple of pinches of cayenne pepper. It's not spicy in the least...it just adds something I can't explain. It was so tasty. Thank you, Grandma Ople!

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Reviewed: Apr. 21, 2011
For all those brown egg people out there...if you hard boil the eggs egg-sactly the way Ken does with the vinegar and salt...the brown color will scrape off when you're done...leaving perfect eggs for Easter egg coloring. We raise hens and have a ton of brown eggs. I just couldn't bring myself to buying white eggs when we have so many brown ones. So, Ken's recipe did the trick! I've always had a problem with hard boiling them and one of my theories is they can't be too fresh. Ken, thanks for your sleepless night of hard boiling eggs...I can't believe it worked!

Spicy Salmon with Caramelized Onions

Reviewed: Dec. 12, 2010
Seriously, the best salmon recipe out there. I had to tone down the heat a lot, so my young ones would eat it. But, they LOVED it with the following changes...I only used a dash of the cayenne pepper and most of the paprika and pepper, but doubled the brown sugar. Served with green beans and jasmine rice. This is a definite rotation dinner. Thanks for sharing.

Cube Steak Parmesan

Reviewed: Nov. 13, 2010
I haven't tried with beef...however it was excellent with venison. I'm giving it 4 stars because my kids didn't care for it, but it was probably the venison and not the recipe. I will definitely try this with beef, though. Thanks for sharing.

My family didn't like this one. Maybe it was the fish, but I also know it never got crispy (and I cooked it longer). Not our favorite, sorry.

Easy Mini Quiches

Reviewed: Oct. 14, 2010
I give this 5 stars based on "hope03's" review. I used the Cream Cheese Tart Shell and the Basic Quiche recipes. I filled my mini quiches with a small slice of smoked salmon and about a 1/4 tsp of cream cheese. I poured the egg mixture over and baked at 425 for 30 minutes. It was spectacular! I will be making these again!

Spinach and Sun-Dried Tomato Pasta

Reviewed: Sep. 25, 2010
Excellent. Easy. Entertainment-worthy. I used cheese tortellini instead and added some fresh diced tomatoes and a little crumbled feta cheese on top. Plus I used extra sun dried tomatoes, 5 cloves of minced garlic and extra spinach, but omitted the pine nuts (didn't have any). I was worried the red pepper flakes would be too hot for my little ones, but it wasn't. It held just the right flavor. I will make again! Thanks for sharing.

Sausage-Stuffed Eggplant

Reviewed: Mar. 30, 2010
Very nice recipe! I used homemade venison sausage, which had a kick to it already, so I didn't need to add any extra spices. I also had to substitute monterey jack cheese for the mozzarella (what I had on hand). It turned out wonderfully. My 4- and 5-year-old loved it. The eggplant came out perfect. I will be making this easy dish again and again. Thanks for sharing.

Banana Crumb Muffins

Reviewed: Feb. 28, 2010
Excellent! I listened to another reviewer and didn't put the crumb topping on until the last 8 minutes of cooking, but I wish I HAD put it on from the start! It would have melded more with the muffin. But other than that, the taste was fantastic! Very moist. Definitely a keeper!

Braised Venison with Rosemary and Shiitake

Reviewed: Feb. 26, 2010
Superb! This is a fantastic venison recipe. Our meat came out so tender. I thought of using our slow cooker, but wanted to try the recipe as stated. I think for other reviewers who said their meat came out dry, using the wrong cut of meat could have been to blame, maybe? The only change I made was using 2 beef bouillon cubes instead of one because I felt it needed a little salt...don't ask me why, I don't like salty, but it needed a little more. I also thickened my sauce at the end. My kids and hubby all loved it. They thought it was beef instead of venison. This will be a staple venison recipe in our house. Thanks, Ruth, for creating and sharing!

Tomato Spinach and Basil Soup

Reviewed: Nov. 16, 2009
Yummy! I made the soup using fresh tomato sauce I had made from our garden (which had bits of carrots and celery in it already). I sauteed the onions and garlic (I doubled the garlic) and then pureed the whole thing as smoothly as I could get it. I didn't have fresh spinach so I used frozen spinach (drained really well). I made a white pizza with a little of the leftover spinach and used the soup as a dipper. It was absolutely fantastic! This is a keeper!
