Tomato Spinach and Basil Soup

Yummy! I made the soup using fresh tomato sauce I had made from our garden (which had bits of carrots and celery in it already). I sauteed the onions and garlic (I doubled the garlic) and then pureed the whole thing as smoothly as I could get it. I didn't have fresh spinach so I used frozen spinach (drained really well). I made a white pizza with a little of the leftover spinach and used the soup as a dipper. It was absolutely fantastic! This is a keeper!

Smooth Strawberry Soup

This is like a special treat for the summer months! I'm actually making it now (November) for a friend who is having trouble swallowing...chilled soup should be easy to swallow. Anyway, I made with frozen strawberries because fresh just aren't in season right now. And it turned out great. I would actually give it 4-1/2 stars, if I could. Next time I will cut the brown sugar in half or maybe not use at all. The honey adds the right flavor to this soup. Thanks Janice, I will be making this again during the warmer months!

Autumn Spice Ham Steak

Great recipe! Both my toddlers eat this and asked for seconds. I added sliced carrots and some Allspice to the apple mixture. Plus, I used pure maple syrup. I had precooked ham steaks and just tossed them into my electric skillet once the apples and carrots cooked. I will make this again...you can't get much easier than this for a weeknight meal!

Ultimate Chicken Fingers

The first time I made this recipe I would have rated it only with one star. It ended up tasting just like Bisquick. But, I tried it a second time replacing the Bisquick with Italian seasoned bread crumbs and viola...there it was...a great tasting homemade chicken fingers dish. I omitted the salt, and added garlic powder and the paprika to my already seasoned bread crumbs. The kids loved them and I will definitely be making these again with my alterations.

Venison Scaloppini

Top-Notch! This was excellent. As another reviewer said...this is hands down the best venison recipe! I started with 2 steaks (bone-in). I cut each steak into 4 pieces and flattened real thin. I fried them without ever putting them in the sauce or oven. They didn't need either one. I did made the sauce, but nobody eat it. My kids actually asked for apple sauce and it tasted really good that way. I will be making again providing my husband can make the bow hunting deadline. Thanks for sharing.

Iced Pumpkin Cookies

OMG...these are amazing! Who the heck needs chocolate when you have these delectable morsels! I've been making these for about a year and I have to say they truly are our favorite cookie. I use fresh sugar pumpkin, grown in our garden, and bake it in the oven then puree it. I also use all dark brown sugar instead of the white and they only need to cook for 13 minutes. Sometimes I ice them, but they really don't need it...they're that good! Gina, you are the cookie goddess in our household! Thanks for our most loved cookies!

Venison Chili

Excellent Chili. It's definitely not the normal chili flavor, but excellent. I added a bunch of veggies, like carrots, zucchini, summer squash, celery and onion and cooked the whole thing in my slow cooker. I used venison chops. I could have left the meat on the bone and served as is, but I took the time to shred the meat and it was well worth it. It would have been nice to leave it on the bone too...for a nice dinner presentation. The meat was so very tender! Anyway, this is a keeper in my household. Thanks for sharing!

Burgundy Pork Tenderloin

This was superb! My husband doesn't eat pork, so I made it a night he was out of town on business. The next night he tried some of the left overs...I think I converted him! He loved it! I will be making this again. I also think I'm going to try it with venison.

Apricot Chicken I

I have to review this because it was an excellent meal to bring camping! The taste was very good, not great, but the ease of preparation was fantastic and my chicken was so tender! We had a camping weekend and I brought my par-cooked chicken (marinating in the sauce) with us. I used my electric fry pan and viola I had an instant main dish with little hassle and little cook time. I used French dressing (only thing I had on hand) and I added a little Tastefully Simple Garlic Garlic (just a few shakes). I served over Jasmati rice with asparagus and string beans...It was the perfect camping meal I will be making this again and again...thanks for sharing.

Peanut Butter and Apple Sandwich

This has always been a staple in our house. I do have another suggestion to try as well. I spread PB on one slice of bread and spread honey on the other...add bananas or apples, either tastes great! It's a super yummy lunch. My husband even loves this tasty kid meal. I've also used sun butter (made from sun flower seeds), which definitely doesn't have the same taste of peanut butter, but will do when PB is restricted at school because of allergies.

Black Bean and Salsa Soup

This was the best black bean soup I've ever had. The only salsa I had was a Mango salsa, which ended up giving it such a nice taste. I actually think when I make this again (and I WILL make this again!) I will have to make sure I have the Mango salsa in house. My kids are gobbling this up as I'm reviewing it right now! I also can't believe how easy it was to make...always a plus on a school night! Thanks for sharing, this is definitely a keeper!

Anne's Fabulous Grilled Salmon

This was amazing! I had bought a skinned salmon filet, so before grilling I sprayed my tin foil with grape seed oil. I preheated my 4 burner grill to high. I then placed the tin foil over the middle two burners, which I had turned to low, while turning the two outer burners to medium. This eliminates charring. I flipped it after 5 minutes and cooked 5 more minutes. I might use a tad less lemon next time, but truly loved the taste! I will be making this again!

Unbelievable Spinach Calzones

Unbelievably Good! I actually made a huge mistake, which thank goodness turned out great. I read the ingredients in the morning and decided to make this for dinner. I didn't see the word "dough" — duh! I thought it said "bread"! So, when it came time to make dinner, I forged ahead with my slices of whole wheat "bread". I rolled each piece out as thin as I could get it. I brushed the edges with an egg wash (added salt & pepper) and filled as per the directions. I placed them on my cookie sheet and brushed each calzone with more egg wash. It turned out great!!! I will definitely make this again, but I will have to decide if I should make the same mistake twice.

Quinoa Pilaf with Shredded Chicken

Exceptional for Quinoa! I'm not a huge fan of quinoa, but I like making it because it's extremely healthy for you. But, this is very tasty and my kids liked it too. I didn't use it as my main dish and I had to make a few changes. I didn't have any fresh celery so I used celery flakes. And I didn't have any Italian seasoning so I used Poultry seasoning. It was very good. I will definitely be making this again. Thanks for sharing.

Cod Fish Cakes

I can't believe I've never reviewed these fish cakes before. I've been making this recipe for a long time now and they're awesome! I too add a little bit of bread crumbs (I don't measure...just what gives it a nice consistency). I also add some crab seasoning and coat with flour. They are one of my kids' favorites and a staple in our house! Thanks for sharing.

Slow Cooker Venison Burritos

This was very good. I personally don't like the gamey flavor of venison, which is why I'm giving it only 4 stars. It's partially my fault because I usually soak my venison in milk for 3 days, which really cuts down the gaminess, but I was in a rush and had only soaked it for about 2 hours. But, my 3 and 5 year-old liked it a lot and my husband loved it! I will make this again, but I will definitely soak in milk a lot longer next time. Thanks for sharing a great way to change up the venison dishes.

Ginger Veggie Stir-Fry

Excellent! This is a very quick and easy dish to make. It's so flavorful and my kids just gobbled it up. The only changes I made were I used a tablespoon of crushed ginger and added some cut green bell peppers into the mix. I also didn't want to add the crushed red pepper flakes because if my 3-year-old or 4-year-old would have tasted a flake, they would have went through the roof. So I used a dash of cayenne pepper for just a hint of spice. It was perfect! This has been in my rotation dinners and will continue to be. Thanks for the recipe!

Grilled Mahi Mahi with Roasted Pepper Sauce and Cilantro Pesto

Wow, my husband said this was 5 star restaurant quality! The only thing I changed was I sauteed the fish in a fry pan with a little butter...skin side up at first. And the only reason why I did it that way was because my grill ran out of gas just as I was ready to put it on. Thanks for sharing!
