Carrot, Potato, and Cabbage Soup

This was way better than I thought it would be. I blended half of it, it was a very nice texture. Also, I added a little bit extra basil/thyme (probably a 1/2 teas). And when I made the broth, I added 6 cups of water and 3 chicken boullion cubes. It was very good!

Curried Cauliflower

This was very nice. To make a healthy version, I totally skipped the mayo (and used 98% fat free condensed soup). I also used 2 tablespoons of curry (I like curry flavor), and added a touch of cumin and garlic powder. We'll use this again. Thanks!

Split Pea Soup with Rosemary

Delicious! I used Turkey Bacon, and eyeballed water and vegetable boullion (about 6-7 cups of water). We will make this again. My husband is not a fan of split pea soup and he thought it was great. The kids (age 3 & 5) ate it up.

Brown Rice

To me, this rice lacked flavor. I feel it tasted better the second day as leftovers, maybe the flavors had time to settle in a little more. I doubt I'll make it again, but if you like a milder flavored oniony rice, this might be for you. PS, I used brown rice and precooked it a little bit. Maybe that wasn't a good idea. We don't eat white rice, though. Thanks!

Creamy Potato Casserole

Everyone loved this at a recent picnic we had. I used light sour cream, and you could probably use 2% cheese, also. It was great! I loved the onions. We'll see this again for parties.

Squash Stew

This has a wonderful flavor. I did not find it spicy, in fact, I added extra chili powder, cumin, and cinnamon to give it a little more flavor. It would have been better if I had gotten all of the skin of. Some parts weren't peeled all the way and we didn't like the rough feeling. I baked the acorn squash 20 minutes and let it cool and it made it easier to peel. We will deiintely use this again, but I might use sweet potatoes so I don't have to deal with the squash!

Tofu Quiche with Broccoli

I thought this was going to turn out great, it smelled wonderful as it baked. However, the taste left a lot to be desired. The flavor was very dull and the consistency wasn't great. I thought I would let it cool down and maybe I would like it better. I didn't. My husband thought the consistency was alright, but we both couldn't eat it, it just did not taste good. I feel bad giving a bad rating, because maybe other people will like it, but we didn't. We eat a variety of foods (including vegetarian) and are not picky. It is rare for us to find something we dislike.

Chickpea Curry

This was good, but in our opinion it needed much more flavor. We are big fans of indian food, and really enjoy the flavors. We found it a bit bland (it had enough spice, but just not flavor for us), but we know it has huge potential for us if we add additional spices. Thanks for the recipe!
