About this Cook
I love to try new things with food! I was a cooking novice before graduate school. Then, I started cooking a lot of things for myself and trying them out on other people. I'm getting a lot better, and I have added a lot of cool meals to our dinner table!!
My favorite things to cook
Anything new and tasty with not a lot of fat or carbs. Recently, my focus has been on making meals that will last a few days so we have leftovers--we have a really busy schedule!
My favorite family cooking traditions
Christmas cookies were always a favorite of mine--my mother's peanut butter balls were the best. I also love Thanksgiving dinner, so we recreate that several times a year.
My cooking triumphs
I make great guacamole as well as this cold thai noodle salad with peppers, fish sauce, and sriracha sauce. And, I have made several dishes with beans that my fiance actually asks for--and he claims to hate beans! Finally, I love to make fun drinks--mojitos, margaritas, and sangrias are so fun to make!!
My cooking tragedies
I love tofu, so I try a lot with it, but often I'm not very good at it. I like fried tofu in thai dishes from restaurants, but I have get to replicate it. Also, I'm either really bad at cooking spaghetti squash and eggplant or I don't like either of them as dishes because I have tried them more than once!

Awesome Chicken Noodle Soup
Just made this today for my sick fiance. Followed the instructions exactly, except I cooked the noodles separately, as suggested by reviewers, because I have dealt with mushy noodles in the past. It was very good. The flavor of the broth was very light, but that was good for the sick man in the house!

Stuffed Pattypan Squash
This was great! It exceeded my expectations. I was a little confused when the recipe called for me to have stem removed and then told me to remove the stem in the directions, but I just left them on and removed them after cooking. I did use reduced fat colbyjack and parmesan, and it was wonderful!

Baked Omelet Squares
This is really great! We were looking for a new breakfast idea, and this fit the bill. Love the cheese layer at the bottom. I sauteed one onion, one green bell pepper, 1/2 red bell pepper, and fresh mushrooms for the veggies. No black olives or jalapenos--just didn't think we would like it in the morning, but I'm sure it would be good.
