Healthier spin (especially if you omit the mayo) on tuna salad. Very bright and fresh flavor. Would be lovely in finger sandwiches for a shower or luncheon.

Straightforward recipe yields nice moist muffins. I like sweet muffins, so I mixed up a glaze of powdered sugar, milk & vanilla, and drizzled over the top while the muffins were warm. As others recommended--putting the dollop of jam in the center seems to work real well. With the glaze they are gooey as heck, but they go real well with black tea or coffee.

We enjoyed this dish--a tasty side to serve with baked chicken etc . To save time we mixed the salt, pepper, flour and milk together and poured a little on each layer-- adding the remainder over the top after layering. We also indulged by sprinkling shredded Cheddar cheese on each layer.
