I'm an 8th grade science teacher. My favorite thing to do is spend time with my husband, and I also love to cook.
My favorite things to cook
I like cooking a lot on the weekend and freezing/refrigerating it. I am way too busy and tired to cook on weeknights. Lasagna, enchiladas, chili, and Tikka Masala are all good to have as leftovers as the flavors blend better after mingling together awhile. I have been trying lots of casseroles lately, too.
My favorite family cooking traditions
For Christmas, instead of having a traditional meal, everyone brings lots of different finger foods. Some are traditional, but I like to always brings stuff with an international flare.
My cooking triumphs
Usually I try to follow recipes, but lately I've been adding my own ingredients to things which have worked out well. I also made up a great guacamole recipe that everyone always wants me to make for parties.
My cooking tragedies
I have a lot of trouble cooking eggs, generally. My scrambled eggs are too watery. My fried eggs stick to the bottom of the pan and then I break the yolk trying to get them unstuck. I can boil an egg, that's about it. Everything else is hopeless.

Cheesy Corn
A note from the submitter: it's not supposed to thicken up. If you go to any BBQ in Kansas City, this is what you'll get, served in a small cup. It is kind of like the soup.

Tomatillo Soup
Did this one last year and it didn't work so well for some reason that I can't remember. But I tried it again tonight and it rocked.
