Really good - very moist & sets up great. I have had issues before with pumpkin or banana bread having an uncooked middle, but after this comes out of the oven I let it cool for about 1 1/2 -2 hours and then cut it into slices. Perfect for mincemeat pie lovers!

This was awesome!! The only change I made was to microwave the potatoes (I had 4 large & 2 small white potatoes)for about 5 minutes before slicing into crock pot. I added some fresh sauteed white mushrooms and used leftover sliced deli ham and cooked it on low for about 7 hours. It is delicious and it will be a staple for the fall and winter months. I added a little extra water so there was extra "gravy" to spoon over everything at serving time. This recipe is great to use when you just have a few leftovers sitting around. Thanks for a great recipe!

Excellent recipe!! Tastes just like apple pie - I substituted graham crackers for the bottom crust & oatmeal topping for the top crust.
