Harvest Pork Stew
This is an unusual and tasty stew. I haven't tasted anything quite like it. The recipe makes a lot of stew - consider halving. The timing of cooking the ingredients is off in the recipe. The challenge is to cook the ingredients so that they all become tender at the same time. Another reviewer suggested a good order. I tried my own but my timing was off since the butternut squash turned to mush. Maybe that was the intent of the recipe, because ut added creaminess, but i think it would be better as a distinct ingredient. Timing may be crucial to the perfect execution of this recipe.

Low Sugar Strawberry Rhubarb Crunch
A definite keeper with a couple of modifications. I substituted cooking splenda for the honey - 1-2 tablespoons. It came out tart, but not too tart. As others suggested, I used 2 tablespoons of cornstarch and 1/4 cup splenda brown sugar. The topping was a bit skimpy but that may have been because I used the one minute oats. Next time I will may double the topping.

Low Carb Cauliflower Leek Soup
This is an ok, easy recipe. I used chicken broth and fat free half and half. No doubt it would have been better with cream but the old arteries can't take it. Even though I mixed the soup with a hand mixer for a very long time and overcooked the vegetables the soup had a lot of texture and never truly became creamy. Maybe my mixing skills are lacking. To make the soup more enjoyable I added a dollop of sour cream and a sprinkling of feta cheese.
